Mushrooms can be salted using hot or cold methods. Cold salting means soaking oyster mushrooms in cool, salted water for 6-7 days. The liquid should be changed every day to avoid bad odor bitterness. Many housewives prefer to add half rings of onions or small fragments of vegetables to mushroom fruits - this makes the dish more aromatic and beautiful. The hot method consists in boiling the product and its further packaging in cans, which must be sealed and left to "mature" in a cool basement or cellar.

If you decide to marinate your crop, you should be patient - the process resembles the procedure for rolling up any other stocks for the winter. The mushrooms are mixed with a marinade of vinegar, salt, pepper and spices to taste. The resulting "mixture" is boiled and then twisted into pre-sterilized jars.

Since each housewife adheres to her own recipe, some people prefer to boil oyster mushrooms first, and then add marinade to them. Salting

You can salt it hot and cold. With cold salting, the mushrooms are washed and soaked in a solution of salt water for 6 days (Figure 6). The water needs to be changed every day, otherwise they will become bitter.

With hot salting, the product is first boiled in salted water for 15 minutes, then laid out in jars, sealed with nylon lids and stored in a cool place with a temperature of no more than 8 degrees.
