Compote

To prepare a tasty and aromatic compote, you do not need to have great culinary skills. You just need to prepare the necessary ingredients and follow simple rules. You need to take 750 g of viburnum fruits, peel them of twigs, rinse under running water, knead with a wooden spoon. Collect the juice released during this process in a separate bowl.

Then in a saucepan you need to boil 2 liters of water, after which it should cool. After that, add the juice of viburnum berries here. Then put the compote on the fire, cook for 15 minutes with constant stirring to preserve all the useful properties. At the end of the compote, add 50 g of sugar or 20 g of honey.

If you need to close the compote for the winter, you need to wash and sterilize the cans, pour the drink into them and roll up. After cooling, they should be placed in a cool place.

Viburnum can grow as a tree, but is more commonly found as a shrub. The plant is a long-liver - it grows and develops up to 50 years, and even longer under favorable conditions and protection from pests. The height of the viburnum sometimes reaches five meters. Wide foliage and noble appearance make the plant an enviable decoration for garden plots and park areas.

Where does it grow

Viburnum vulgaris can be found on the banks of a river or near a lake, in a marshy area, since the plant loves well-moisturized soil. It grows in shady forests of deciduous trees, located on its edges and outskirts. The plant prefers tropical and temperate climates. In the regions of the European part of Russia, it grows in the middle lane, and in the South of the country it grows everywhere.

The homeland of almost all types of viburnum is China and Japan. The plant is also found throughout North America. It is found in European countries with warm and temperate climates. Viburnum is cultivated for the preparation of medicinal raw materials, for culinary purposes, and also as an ornamental shrub.

Botanical description

The shrub of the red viburnum reaches a height of 2.5 to 4 m. The gray bark with a brownish tint covers the woody parts of the shoots. On it you can see longitudinal cracks, damage by pests of which causes damage to adult viburnum bushes.

  • Shoots. They have a rounded shape and yellow-brown color. Some parts of the plant may be grayish-white. Inside, a hexagonal core is white with a reddish tint. At the tips of the fruit shoots there are two false buds, between which you can see the continuation of the shoot. Fruitless shoots end with a single terminal bud.
  • Leaves. Quite large: length and width vary from 5 cm to 8 cm. They are broadly ovate or rounded. Complex - divided into three or five blades. The upper part is bare, the surface is wrinkled, the color is dark green. The lower part of the leaf has a gray-green color due to the dense pubescence.The edges are often jagged. The placement of leaves on the branches of the plant is opposite, the attachment is petiolate. The petiole has grooves, and reaches 2 cm in length.
  • Flowers. They have a light, white-green color. Each inflorescence is an umbrella-shaped panicle with a diameter of 8 cm and a length of about 5 cm, located at the tops of green shoots. The edge of the inflorescence consists of sterile flowers, which stand out from the rest in larger sizes. The middle of the inflorescence is formed from small heteromorphic flowers. The active flowering phase of the plant falls at the end of May - beginning of June.
  • Fruit. Drupes, spherical, forming volumetric clusters. Painted in bright red. Inside there is a large bone up to 9 mm long. The pulp of the fruit, with sufficient juiciness, is distinguished by an astringent bitterness. The intensity of the taste decreases after exposure to sub-zero temperatures. Fruits fully ripen in October.

With special pruning from a red viburnum bush, you can grow a tree, however, its crown will not be too thick.

Preparation of medicinal raw materials

The bark, as well as fruits, are referred to the medicinal raw material of the red viburnum. Their procurement takes place according to different rules described in the table.

Structure

The healing properties of red viburnum are due to the content of biologically active substances in the plant. Moreover, any kind of raw material can be beneficial, since valuable compounds are contained in all parts of the shrub.

  • Viburnum flowers.They are very rich in flavonoid compounds (astragalin, peonoside, quercetin), as well as organic acids, among which ursolic acid predominates. Flowers stimulate the endocrine glands, have cardioprotective and antipyretic properties. They have an antitussive effect.
  • Viburnum fruits. They are rich in organic acids: isovaleric, acetic, oleonic, ursolic, chloragenic, cinnamic, as well as their derivatives. They contain large amounts of antioxidants (flavonoids). The viburnum contains almost all known vitamin and mineral compounds. Vitamin P, K, C, potassium, zinc and selenium are contained in a daily dose of only 100 g of fresh fruits. Viburnum fruits strengthen the immune system, saturate the body with vitamins, rejuvenate it, and protect it from negative exogenous factors. Improves the functioning of the nervous system. They are able to reduce pressure, eliminate spasms, and improve the quality of digestion. Strengthens the heart muscle, normalizes the permeability of the walls of blood vessels.
