The recipe for the following delicacy consists in the sequential execution of several steps:

  1. Cut the pumpkin (3-4 kg) into cubes, put them in a plastic bag and send them to the freezer for 24 hours. Thanks to this, the vegetable will become soft, as with heat treatment.
  2. Remove the pumpkin, sprinkle with a pinch of salt and ½ tsp. citric acid, stir. Leave on the table until completely thawed.
  3. Drain the excess liquid from the pumpkin. Add another 2 tsp. citric acid and 1 kg of sugar. Leave at room temperature for 2-3 days, stirring occasionally the vegetable sticks.
  4. Drain all liquid. Then cook candied pumpkin fruits at home in any convenient way: in the oven or in an electric dryer.

After that, let's start preparing the sugar syrup. Take a heavy-bottomed saucepan and add sugar to it. Then add water. Stick to a 1: 4 ratio here.That is, you need 1 part sugar and 4 parts water. For my amount of pumpkin, I took 100 g of water and 400 g of sugar.

Now you need to add 1 tbsp. vinegar. Instead of vinegar, you can use the juice of half a lemon or 0.5 tsp. citric acid. This is done so that the sugar does not crystallize and does not form a white coating on top of the candied fruits.

After that, put the pan on the fire and bring to a boil. Do not forget to stir it constantly. When the syrup comes to a boil, continue cooking for another 5 minutes. The syrup will gradually take on a caramel color and become more viscous.
