Grape compote - step-by-step recipes for cooking at home for the winter with a photo

Currently, you can buy virtually any factory-made drinks, but it is very difficult to find among them products of high quality and taste, and grape drinks are not common at all. Therefore, homemade drinks always enjoy the attention of the family. Homemade compotes are not too troublesome, while there are a lot of positive aspects. The main thing is natural ingredients, canning without industrial chemicals, the ability to preserve berries and fruits for the winter.
Grape compote tastes like juice, it is one of the most concentrated and delicious compotes. It is suitable for a festive table and for everyday use. Children love him very much! In the presence of grapes in the garden, harvesting berries in this way is a sign of good taste!

  2. Then we transfer the grapes to jars and fill with boiling water. Leave to infuse for 20 minutes.
  3. Without wasting time, let's take up apples for now: ripe and aromatic apples are suitable for conservation, but not soft ones.
  4. They should be washed, blotted with a paper towel, and pitted.
  5. Cut the apples into cubes (large enough) and sprinkle with sugar.
  6. They should stand for about 20 minutes.
  7. Now carefully pour liquid from cans into a bowl of apples, bring it all to a boil, cook for 3-4 minutes.
  8. We collect our compote: we shift the apples to the grapes, pour boiling liquid to the edge of the jars and roll up the lids prepared in advance.
  9. We check if everything is in order with the lids, and, turning it upside down, leave it under a warm blanket.
  10. If the apples are not ripe enough or sour, you can add 2 or 3 tablespoons of sugar during the conservation process.

Compote "White grapes"

grape compote

Light grapes help fight fatigue because they are high in iron so that they nourish our muscles. Let's prepare a compote of any kind of white grapes for the winter. Small and large white raisins are also suitable for this purpose.

Ingredients:

  • 1 kg of white grapes;
  • 0.7 l of water;
  • 300 gr. Sahara.

Cooking method:

  1. Let's start the preparation by boiling the syrup: add granulated sugar to boiling water and cook for 3-4 minutes.
  2. Remove it from the stove and leave to cool to 40˚.
  3. We choose grapes that are fleshy, ripe and free from defects.
  4. We fill a jar with it (I recommend a 1-liter one, first pour boiling water over it) almost to the top and fill it with syrup, close the lid.
  5. This time we will sterilize in a slightly different way: from the high temperature in the jar, the berries may not retain their integrity.
  6. We put a pot of water, at the bottom of which there is a wire rack or cloth, and heat it to 40 degrees.
  7. We put jars of grapes so that the water covers them by more than 2/3.
  8. Bring to a boil and simmer for 20 minutes over low heat.
  9. Next, we take out the cans, roll them up tightly and set them upside down, wrap them up with a blanket.
  10. It will turn out very tasty.
  11. For the transparency of the syrup, you can put a couple of cherry leaves in the jar along with the grapes.

Container preparation

For each recipe, you need to properly prepare the container. Compote is canned in glass jars of various capacities, most often from 1 to 3 liters. They can be closed with twist caps or simple ones, for which you need a special seaming key. The jar itself must be absolutely intact, without internal cracks and chips. The covers must be new and the covers made of unpainted metal must be free of rust.

Container preparation

The container must be thoroughly washed and sterilized in one of four ways:

  1. A special grate or other stopper is placed in a saucepan, water is poured and brought to a boil. The jar is placed on the wire rack upside down so that the steam completely flows over the vessel from the inside for 15–20 minutes. Lids are also sterilized. Banks are rearranged on a clean cloth upside down and cooled.
  2. You can sterilize the container by placing it in a saucepan and also filling it with water. The water should boil for 15 minutes, and it is better to put a wooden board on the bottom.
  3. A steamer or multicooker is suitable for sterilization, in which containers and lids are placed for 15 minutes. Banks in a multicooker should be filled with water about 1/3 and heated until steam appears.
  4. Microwaves can also be used to disinfect glass. 1-2 cm of water is poured into a jar and placed in the microwave at maximum power until it boils and the necessary steam appears. If the can does not fit in the oven, it can be placed on its side.
  5. The washed, damp jars can be placed in the oven upside down and heated at a set temperature of + 100 ° C for 40 minutes or up to + 150 ° C for 15–20 minutes. This method is convenient for the ability to load a large number of cans, but you need to make sure that the overheated glass does not burst.

Important! The lids cannot be sterilized in the microwave, they are made of metal!

Compote "Grape cascade"

grape compote

The grapes are very healthy for the whole family. Dark red or blue colored grapes help prevent cancer, another of its important merit is that it "knows how" to fight viruses and bacteria, preventing infections.

Ingredients:

  • 1 large bunch of blue grapes
  • 0.5 cups of sugar;
  • sprigs of mint, lemon balm;
  • a slice of lime or lemon;
  • water.

Cooking method:

  1. The number of products is indicated for 1 three-liter jar.
  2. When closing such a compote, note that you need to thoroughly revise the entire bunch, if it is too long on top, then cut it off.
  3. You also need to remove all branches "not occupied" by grapes, as well as dry and "inanimate" ones.
  4. So, we wash a bunch of grapes, filling it with water beforehand.
  5. We take it out of the water, let it drain off excess moisture, transfer it to a sterilized jar, soda - a sprig of lemon balm, a few leaves of mint and half a small lime.
  6. Prepare the syrup: put the water on the fire, bring to a boil, add sugar, let it boil for three minutes.
  7. Immediately pour the syrup into a jar of grapes, break up with a lid and securely close with a preservation key.
  8. Jars should be carefully sterilized, as conservation does not like anything "superfluous" in the jar (and the presence of twigs is still a small risk).
  9. Therefore, I advise you to hold the cans over the steam for at least 15 minutes, and do not forget to boil the lids without rubber bands.
  10. Cover the overturned jars with something warm and let cool.

Accelerated option

There is a situation when you need to preserve a large amount of grapes, but there is absolutely no time for this. For such a case, there is a completely unique way by which the compotes are preserved. Grape compote for the winter can be prepared in a matter of minutes. The following ingredients are required: based on 7 liter cans, you need 2 kilograms of black grapes, 0.5 kilograms of sugar and 4 liters of water.

The cooking sequence is as follows:

  1. First, the cans must be washed, boiled, and then dried well.
  2. Remove the grapes from the branches, carefully sort out and rinse.
  3. Put berries in hot jars, add sugar and pour boiling water over everything.For aroma, you can add a little clove, cinnamon or mint.
  4. After that, immediately cover the jars with lids and immediately roll up. Turn each jar upside down and wrap tightly.

Canning without preparation

It is interesting, but you can make a delicious grape compote for the winter without sterilization and without pretreating the products. In this case, the berries can not even be removed from the branches. For work, you will need 4.5 glasses of sugar, water and 1-1.5 kilograms of grapes.

Here, the process is already being conducted somewhat differently:

  1. The washed bunches of grapes must be decomposed into 3 three-liter jars.
  2. Pour the contents of the jars with plain raw water, but not to the top. The liquid should only reach the "shoulders" of the container.
  3. Pour an equal amount of sugar into each jar.
  4. Now you need to proceed directly to cooking compote. To do this, put each jar in a wide saucepan filled with water, at the bottom of which a soft cloth is neatly laid. It turns out a semblance of a water bath. The cooking process takes about half an hour after the water boils.

The finished product can be rolled up and sent for cooling, carefully wrapped in a warm blanket. In this form, it should stand for at least a day. During this time, the drink will infuse well and change color.

Cooking method:

  1. Wash the pears, peel and cut into large pieces;
  2. Remove the berries from the branch, rinse well;
  3. Now you need to pour the prepared fruits into jars, they and the lids are pre-sterilized in any convenient way;
  4. Bring water to a boil on the stove and pour the prepared fruits with boiling water;
  5. After a while, it usually takes about half an hour to infuse, drain the water, add sugar and boil again, the amount of sugar can vary from the amount of fruits and their sweetness, before pouring the prepared syrup into the pulp, it is better to taste it;
  6. When the mixture is ready, it is poured into the jars and closed with lids.
  7. It is recommended to turn hot workpieces and wrap them in a warm blanket, so the workpieces are sterilized on their own.
  8. You can remove the twists for storage only after they have completely cooled down.

Grape compote with pears for the winter

grape compote

Ingredients:

  • Grapes - 4-5 medium bunches;
  • Plum - 0.5 kilograms;
  • Sugar - 250-300 gr.;
  • Water.

Cooking method:

  1. Rinse containers for a drink well, you can do it with soda, this is an economical, safe and quick way to wash any containers, leave to dry;
  2. Lower the drain to the bottom of the container, it should be no more than 1/4 of the can's volume;
  3. Now you can stack the bunches, now there should be no more than half of the fruit;
  4. In a separate saucepan, you need to bring water to a boil, pour the fruit over it, let it brew for 25-30 minutes;
  5. Now pour the water from the jar back into the container, you do not need to take out the pulp and add sugar to boil, at this moment you can try the syrup for sweetness, if the mixture does not seem sweet, then you can sweeten the mixture a little, but you should not spare the sugar, otherwise the mixture may deteriorate before the moment comes to drink it;
  6. Pour the fruit in the jar again with the already prepared syrup;
  7. Close the cans with lids and put them upside down in a warm blanket until they cool down, this is necessary for additional sterilization of the finished drink.

  9. At any time, you can open a jar of such a delicious mixture and enjoy the refreshing summer.
  10. Such a preparation should simply be present at every holiday all year round.

Whip up blanks

Grape compote is the easiest preservation option. It only needs two things: dishes and food. Rolls are best done in three-liter jars under metal lids. This volume can be considered optimal. From the products for work you will need (per one can): 3 liters of water, 200 grams of sugar, ½ teaspoon of "lemon" and grapes.

Work begins with preparing the dishes:

  1. Banks must be thoroughly washed with baking soda and rinsed well under running hot water. Boil the lids separately.
  2. Tear the berries off the branches, rinse and put in prepared jars, filling them by about one third.
  3. Boil water in a separate container, and then pour it into jars with grapes to the top and leave in this position for 8-10 minutes.
  4. After the time has elapsed, the water from the cans must be drained into a clean saucepan and sugar added to it. Bring the mixture to a boil and warm up a little. During this time, the sugar should completely dissolve.
  5. Pour citric acid into jars with grapes, pour the prepared hot syrup and roll up immediately.

This is how, without much effort, you can prepare grape compote for the winter. Without sterilization, it can stand perfectly even for more than one year.

Grape compote recipe

grape compote

Ingredients:

  • Grapes
  • Ternovka
  • 150-200 gr. Sahara
  • 0.5 teaspoon citric acid
  • Hot water

Preparation:

  1. We wash and sort out the berries.
  2. We fill the jar with berries by a third or a little more.
  3. Large berries can be chopped with a toothpick to prevent bursting.
  4. I usually don't do this with smaller berries.
  5. Pour hot water into the jar (so that the jars do not burst, put an ordinary tablespoon in it).
  6. We leave the jar with boiling water for 15-20 minutes.
  7. During this time, we will prepare the lids by boiling them for about five minutes in water, you can just hold them in boiling water.
  8. Then we pour the water from the jar into the pan (for draining it is very convenient to have just such a lid with holes)
  9. Add sugar there and boil for a few minutes to dissolve the sugar.
  10. At this time, pour citric acid into a jar of berries.
  11. Pour the finished syrup into a jar and roll up the lids.
  12. That's all canning.
  13. If you want, you can close the grapes in jars with tassels.
  14. Only, in my opinion, this process is more painstaking and capricious.
  15. The brushes must be thoroughly washed, the excess tails and sticks must be cut off with nail scissors.
  16. And then preserve the grapes, as described above in the recipe, and for the reliability of the cans it is better to sterilize.

About prescription subtleties

Grape compote is cooked according to different recipes, using the knowledge of some technological nuances:

  1. prepare a drink with and without sterilization of cans;
  2. put grapes in a jar with individual berries or whole brushes (the branch gives astringency), however, the branches are often cut off, since dirt or insects can get into them;
  3. in some cases, the berries are pitted;
  4. grapes can be an independent ingredient in a drink or in combination with other fruits (plums, apples, pears, apricots, peaches, raspberries and other seasonal fruits);
  5. compote is cooked from both black and light grapes (for a rich color, cherry leaves and black chokeberry are put in with green berries);
  6. for the appearance of a spicy taste, add cinnamon, cloves, cardamom, vanillin (0.5 teaspoon per 1 kg of berries) or lemon (orange) zest;
  7. this product is used not only for drinking, but also for making jelly, mousses;
  8. to improve the taste for 1 kg of berries, add 30 ml of Madeira or port wine;
  9. citric acid is put not only for the appearance of sourness, it makes the color brighter and richer, many put a slice of lemon instead of it;
  10. virtually all grape varieties are suitable for making compote - sweet or sour (it is believed that it is not even the variety that matters, but ... the beauty of the grape twig), from a utilitarian point of view, blue small grapes are best: they are not suitable for food, but for compote perfect! Usually they use varieties that are used to make wines (Isabella, Golubok, Lydia, Kishmish, Moldova).

Some facts:

  • regardless of the method of canning, the compote is stored all winter at room temperature;
  • the average calorie content of this drink is 77 kcal per 100 grams;
  • advantage of compote in relation to juice: juice is a product of direct extraction, it can cause allergies, like grapes itself, compote is a product of "jam", it is a softer and more balanced drink.

Cooking recipes

No canning

The recipe is quite simple, even a child can cook such a compote.

Ingredients: 700 gr. grapes, 200 ml of sugar, 2 l. water, 2 gr. citric acid (optional).

Work progress: pour water into a saucepan, put washed berries in it, bring the compote to a boil, then leave on low heat for up to half an hour (or boil for 8 minutes, then put to cool). Compote is cooked with the lid closed. As for sugar, options are possible: you can put it during cooking or later, in each mug. If you put sugar right away and do not drink the compote in two days, the drink may go bad; lack of sugar slows down this process.

Without sterilization

I. Ingredients for a three-liter jar: 1 kg of grapes, 150-200 gr. sugar, 2.5-2.8 liters. water, 2 gr. citric acid.

Work progress: the grapes are removed from the brush, the spoiled berries are removed, washed thoroughly, placed in a sterilized jar. Berries should occupy about half of the volume of the jar, 1/3 is enough for a three-liter jar.

Next, fall asleep with sugar; if the berries are sweet, put 4 tablespoons of sugar and citric acid for a three-liter jar, but if the selected grapes are sour, put 5-6 tablespoons of sugar, and citric acid can be omitted.

Pour boiling water over the jar (so that it overflows a little), roll up the lids, taking them out of the boiling water, shake the jar to dissolve the sugar and put the lid down. Usually, the cans are “wrapped” before cooling, for example, in a blanket.

II. Option with "double filling".

Ingredients for a three-liter jar: grapes - a third of the capacity (1 kg), a glass of sugar, a teaspoon of citric acid (optional), water - 2.5 liters.

Work progress: the grapes are cleaned of branches and spoiled berries, washed, allowed to dry, laid out in sterilized jars.

Further, opinions on cooking differ. Some pour simple boiling water over the jars, others with ready-made syrup. Cover with a lid and leave for 10-15 minutes. (sterilization).

Then the boiling water (syrup) is poured back into the pan and brought to a boil again, adding citric acid; if it was boiling water, then add sugar. For draining, a nylon cap with holes is usually used.

The syrup is again poured over the jars to the very top (so that a little liquid flows out), rolled up with boiled metal lids, turned over, covered until it cools.

A third option is possible: after the initial sterilization, sugar is poured into a jar and poured with boiled water again.

With sterilization

I. During sterilization, the technology used for any homework is preserved (cans are washed and sterilized, lids are boiled).

Ingredients for a three-liter jar: 1 kg of grapes, 150-350 gr. sugar (for an amateur), 2.5 liters. water.

Work progress: grapes are cleaned of spoiled berries, washed, allowed to drain water. The berries are laid out in banks, they occupy a third of the volume.

Water is poured into a saucepan, sugar is poured, mixed. After boiling, the syrup is boiled for 10 minutes, stirring (so as not to burn).

Jars are filled with ready-made syrup, sterilized for 30 minutes, and then rolled up with lids. Sterilization is possible in the oven or in a container with water - at the discretion of the hostess.

In any case, the recipes presented are not the ultimate truth. Over time, each housewife comes to her own ways of making the most beautiful and delicious compote. The industrialization of the food industry has led many to abandon homemade preparations for the winter. Therefore, the ability to preserve at home is invaluable today! Grape compote is simple, and in winter it is magical!

An invigorating drink that gives energy and strength! These are not just high-flown phrases, but the real truth! It is worth making sure of this by preparing grape compote yourself. Vitamins, as well as aroma and taste - everything in it is beautiful and harmonious. An excellent alternative to all sorts of Coca-Colas and fantasies, believe me, this is not only about children!

General remarks

  • Banks for packaging compote should be washed with soda, rinsed thoroughly, and sterilized.
  • Use sterilized caps for twisting.
  • Check raw materials for suitability in the most conscientious manner. Several rotten berries can lead to spoilage of the finished product.
  • If the compote is not sterilized, then it should be turned over in a sealed form on a lid, wrapped with something warm. Leave this way until the jars cool.
  • After sterilization, the compote is twisted, cooled upside down, without wrapping. In this case, drafts should be avoided - hot cans may burst.

  • Grapes (green, Kish-mish variety, seedless) - 1 kg;
  • Sugar - 600 - 800 grams.

Cooking method:

  1. Separate the grapes from the twigs and wash them thoroughly under running water.
  2. Then pour over boiling water and leave it for 3-4 minutes (to wash off all microbes).
  3. We take the jars, wash them thoroughly with soda and sterilize them for 10 minutes (each jar, by the way, the lids also need to be boiled).
  4. After that, drain all the water from the grapes, dry it a little on a clean napkin or kitchen towel.
  5. Put berries at the bottom of each jar.
  6. There should not be too few and too many of them.
  7. Look carefully so that there are no soft and spoiled places on the berries.
  8. Otherwise, the jar with compote will not stand for a long time, it will simply ferment and deteriorate.
  9. Now we cook the syrup.
  10. For 1 liter of water, take 2 cups of sugar.
  11. When the syrup boils, pour our berries into it.
  12. Then, using a special lid, again pour the syrup from the jars of berries into the pan and boil it for another 10 minutes.
  13. Pour boiling syrup over the grapes again.
  14. We roll up (or twist) the cans.
  15. We turn them upside down and make sure that there are no bubbles.
  16. Then, we find at home an old warm fur coat, down jacket or wadded blanket.
  17. We wrap our jars of compote in it.
  18. And we leave them there until they cool completely.
  19. My cans cooled down for about two days.
  20. When they were already completely cool, I took them out.

grape compote

Ingredients:

  • blue grapes - 300 g;
  • apples of any kind - 200 g;
  • water - 5 l.;
  • sugar to taste;
  • mint - 1 sprig.

Cooking method:

  1. Before preparing compotes, fruits must be washed without fail, even if they are collected in your garden.
  2. For convenience, use a regular colander.
  3. Meanwhile, put the water in a large saucepan over the fire.
  4. While it boils, you can sort out the grapes, if it is firmly attached to the bunches, then do not cut it off, and if it "falls" from the branch, then it is better to cut it off.
  5. Add blue grapes to boiling water.
  6. Then immediately add the apples, which are pre-cut into slices, cut the heads.
  7. By the way, the slices should turn out to be rather large, since thin and small ones quickly boil.
  8. You do not need to remove the peel from apples, the main thing is to wash them well.
  9. Cook the grape-apple drink for 15 minutes.
  10. Add sugar to your taste to the boiling compote of grapes and apples.
  11. Please note that grape compote is slightly sour, so you need more sugar than for raspberry, apple, etc. compote.
  12. Together with sugar, washed mint is added to the compote, as well as, if desired, cinnamon, vanilla and other spicy spices.
