- grapes (preferably dark) - 10 kg.
- granulated sugar - at the discretion
- Wash the bunches of grapes with running water, carefully treating each berry. Go through the fruits, excluding the spoiled and rumpled ones.
- Use a blender, meat grinder or food processor for chopping. After that, strain the liquid from the pulp and cake, having built a kind of filter: put a gauze cloth folded in several layers in a colander, skip the composition.
- Squeeze the resulting juice, pour into a saucepan with thick sides and bottom. Pour the pulp, which came out as a result of spinning, with water at the rate of 5 kg. raw materials account for 0.5 liters of filtered (drinking, boiled) water. After adding the liquid, stir the mixture and squeeze again, add to the saucepan with juice.
- Place the container on the stove, turn on the hotplate to the middle mark, heat until the first bubbles appear. In no case do not allow the composition to boil, the duration of heat treatment is about 15-20 minutes. As soon as you notice that the mixture begins to boil, set the temperature to the lowest setting.
- After the boiling period has expired, remove the container from the heat, leave for 1.5-2 hours. This period is necessary for the juice to become cleaner and transparent. Next, place the pan on the stove, bring to a boil (second pasteurization). At this stage, you can add granulated sugar (optional), while waiting for the crystals to dissolve.
- Proceed with cleaning and sterilizing the cans. Wash the containers with baking soda, then place them in a wide saucepan with a wooden backing or cotton towel at the bottom. Fill the cavities with water, boil for 15-20 minutes. Sterilize the caps for a quarter of an hour.

Grapes, due to their unique composition, have properties valuable for health. And the characteristic taste and aroma of the fruit deserve to try to keep them longer. The easiest way to extend the sun berry season is to make drinks and preserve them for the winter. The juice retains a unique flavor bouquet, most of the vitamins and various microelements.
The taste, color and consistency of the finished drink directly depend on the ripeness, variety and method of grinding the berries. Separating the liquid from the fruit is an easy task, but excellent quality juice requires attention to all stages of production, starting with the selection of grapes.
- 1. The best juices are obtained from wine hybrids: Isabella, Cabernet, Lydia. The drink is made of dark technical varieties with a rich taste and wonderful color. Light fruits are also used, but if the juice comes out pale, it is tinted with a small addition of bright berries.
- 2. The main stage of cooking is the separation from the pulp: pulp, seeds and peel. When mechanically grinding the pulp with subsequent squeezing, the taste is richer with a pleasant tartness. If the seeds and rind are separated without chopping, then the drink will be light and soft.
- 3. With proper ripeness and sweetness of the fruit, it is not necessary to add sugar to the blanks. If an unripe product is used or the variety is not sweet enough, then during the cooking process, put from 50 to 100 g of granulated sugar per 1 liter.
- 4. It is permissible to grind dark grapes without removing them from the bunch. Its branches contain tannins, which enriches the taste and does not harm keeping quality. White varieties must be separated from the brush, otherwise the juice acquires a grayish unpleasant color.
Sorting through the fruits, spoiled berries are discarded. It is better to make jam or jam from the withered and raisin-like specimens. Bursting after heavy rains, cracked, without signs of rot, are permissible for processing into juice or wine. Particular attention is paid to the preparation of cleaning the grapes: they are washed in several waters, trying to remove all wax deposits. The surface of the peel contains yeast that promotes fermentation and should be washed off if possible.
There are several ways to separate the juice from the pulp at home, the easiest of which is to squeeze it out with your hands. Knead the berries by placing them in a colander, or use a fine sieve. Then the mass is wrung out through a filter cloth, layers of gauze.
For large volumes of workpieces, it is convenient to use other methods. Methods for grinding and pressing berries:
- 1. Blender or meat grinder. The raw materials are ground together with the peel, the juice after such pressing requires filtration.
- 2. Juicer. Gives out a cleaner product, the pulp leaves almost completely. It will be necessary to regularly release the working parts from the thick mass of waste (cake).
- 3. Juice cooker. The machine performs all the functions on its own, you just need to place the fruits in a special compartment and turn on the "cooking" mode. In the process, you should crush the steamed berries several times with a mashed potatoes. Ready juice can be immediately packaged in sterile containers and determined for long-term storage.
At room temperature, the fermentation process in the drink begins as early as 2-4 days.In order for the juice obtained by any of the methods to survive longer or stand all winter, it will need several more processing stages.

It happens that during storage the grape juice becomes cloudy, a sediment appears in it. There is nothing wrong with that, this happens during long-term storage. You just need to carry out a filtration or clarification procedure. The filtering is as follows:
- the cans are unsealed, the juice is carefully poured into a clean pan, while being careful not to touch the sediment;
- then the liquid is again poured into clean cans, pasteurized for 15–20 minutes and rolled up again.
To prevent turbidity, the juice is clarified during harvesting. To do this, a freshly squeezed drink is poured into a glass dish and left in a cool place for twenty hours.
Then the liquid must be carefully poured into another container. At the same time, make sure that no sediment gets into
Put on low heat, heated to a temperature of +90 degrees, sterilized for ten minutes. Hot juice is poured into glass jars, rolled up and again put in a cool place for four days. After this time, it is uncorked, again poured from the sediment, sterilized, rolled up.
No need to be upset if the product begins to ferment during storage. You just need to immediately process it into wine.
If it is not possible to make homemade preparations, you can buy grape juice at the store. Users who leave reviews in various online publications prefer 100% natural clarified juice.

Juicing methods
There are a large number of ways to prepare a grape drink. Only the hostess chooses the most suitable option for her and gets to work.
In a juicer
Using a juicer greatly simplifies the process of making a grape drink. You just need to place the berries inside the device (it is allowed not to remove them even from the brushes), but before that, rinse them thoroughly under running water.
The mixture must be stirred periodically. Boiling is optional. The finished product is immediately distributed among the jars and covered with lids. Making a drink with a juicer is easy enough.
From a juicer "Traditional"
The recipe for such a drink is simple. The main thing is the presence of a juicer in the house and free time.
Required Ingredients:
- water;
- granulated sugar;
- grapes in the amount of five kilograms.
First, you need to rinse the grapes under water, remove from the brush, sort out and dry. Then squeeze the juice and mix it with water (2: 1). Then add sugar (fifty grams per liter). Boil the mixture, and then boil for 15 minutes. Without waiting for cooling, a person is advised to distribute the finished product among the jars and put it away in a dark place.
"Manual spin"
When there is no juicer or juicer in the house, you can try to squeeze the juice yourself using your hands. It is only recommended to wear gloves (rubber) before doing this. Long-term exposure to grape acid negatively affects the condition of the skin (they are simply eaten away).
Making a drink with your own hands is a laborious way. The first thing to do is rinse the grapes and remove them from the brushes. Put the berries in a separate container and begin to crush. You need to crush all the grapes.
The next steps are straining and distributing the finished liquid into bottles (they are sterilized only after filling by boiling for 15-20 minutes). At the end, the jars are wrapped with something and allowed to cool.
Cooking method
To make juice using this method, you will need several ingredients, namely water (two liters), granulated sugar (one kilogram) and nutmeg grapes in the amount of five kilograms. The berries are sorted out, placed in a container and filled with water.
After the pan is put on the stove, turn on the fire (low) and boil the mixture for half an hour. The finished solution is filtered, mixed with granulated sugar and boiled. At the end, boil for 10 minutes, after which they are distributed among the cans (or bottles).
With apples
Grape and apple juice is a real storehouse of vitamins. Drinking such a drink in winter, when the body is weakened, makes it possible to compensate for the lack of certain elements and increase the functions of the immune system.
To prepare it, you will need grapes (two and a half kilograms) and one and a half kilograms of apples. They are placed in a juicer to squeeze out the juice, after which they are boiled and boiled for 5-7 minutes. The finished solution is bottled and put into the cellar (or refrigerator).
With pulp
The grapes are thoroughly washed and sorted, after which the juice is squeezed out using a juicer. To preserve the pulp, it is recommended to use a special cone-shaped attachment.
The liquid is poured into a container and boiled. The finished drink is distributed in bottles (or cans). Put it in the refrigerator only after the container has cooled down.
How to preserve juice
There are 2 known methods. Each housewife chooses a convenient method of preparing a drink for the winter:
- Pasteurization. It is required to squeeze out the juice, pour it into cans and close it with lids. Put to sterilize for 15-25 minutes. depending on the size of the cans. Then they are pulled out and rolled up.
- Hot spill. Ready boiled juice must be rolled up as soon as the drink is ready.
Each method has its positive and negative sides, you should not be categorical about one method.
What is better to buy or cook yourself
Most fruits or berries are eaten fresh. This way they preserve the maximum vitamins and bring more benefits. But keeping them in their original form is problematic and even impossible. All fruits and berries will sooner or later go bad or rot. Therefore, people are trying to somehow process them in order to be able to eat them in winter. Juicing is one option. Moreover, this product fully retains the properties of the initial product.
The composition of the grapes.
In supermarkets, of course, you can find many companies that produce juices of different tastes and consistencies. There are even a variety of mixed options from different juices. But all purchased juices will not replace natural juices for you, because there is either no real juice, or a very small fraction of a natural product. It also contains dyes and preservatives. If you want to benefit from the juice, then it is better not to trust your health to anyone and to squeeze the grapes at home. Another positive aspect of making juices of your own is that this kind of drink can be made from absolutely any variety. At the same time, regardless of the type, the beneficial properties of the juice will be preserved.
All vitamins present in it are very important for the normal functioning of a person. Sucrose and fructose, which are abundant, are essential to speed up metabolism as well as energy production.
Trace elements are important for maintaining tone. One glass is enough for a person to work faster and more efficiently. The use of grape juice is definitely recommended in case of drowsiness. This drink increases the level of hemoglobin in the blood, stabilizes the number of leukocytes and erythrocytes.
The juice is very useful for the work of the heart, it helps well in case of poisoning. To improve appetite, you can drink a glass half an hour before meals. So it is imperative to harvest the juice, and it is better if at home.

Did you know? There are at least 10,000 grape varieties in the world.
Danger of grapes
In addition to harm and contraindications, the use of Isabella is fraught with a latent threat to health. Let's talk about this in detail.
There is no such threat in fresh grapes; it appears after two to three years of storage of grape wine. The fact is that there are too many pectins in the skin of grapes of this variety - polysaccharides formed by residues of hexuronic acid and acting as thickeners and stabilizers in food products, in common varieties there are 30-40 mg / l, in Isabella - 70-120.
Getting into the human gastrointestinal tract with wine, methanol in the process of decomposition turns into methane acid and formaldehyde, which, in turn, has a harmful effect on the nervous system and liver, damages the optic nerve and can provoke blindness. In large doses, formaldehyde is fatal, in small doses, it is dangerous for chronic poisoning.
Speaking about the specificity of using the variety, the following should be noted:
- It is better to drink the juice of this grape variety using a straw, as it has a detrimental effect on the tooth enamel. For the same reason, diligent rinsing of the mouth after eating berries is recommended.
- While eating grapes, you should refrain from milk, soda and fatty foods, otherwise it can cause digestive problems.
Manual pressing of grape juice
Squeezing out the grape juice yourself is the most difficult method. However, it differs in that the gentle pressure of the berries avoids the tart aftertaste of crushed seeds.
For cooking you need:
- grapes;
- a small amount of sugar.
Step by step recipe:
- The berries are removed from the branches, washed, choked with hands or using any press.
- The resulting liquid is decanted into a saucepan using a gauze filter.
- The pulp is transferred to a separate container.
- The pulp is poured with drinking water in a 1 to 1 ratio, everything is mixed and put on medium heat. The mass is brought to a boil, cooked for 10 minutes, and then cooled.
- The resulting broth is also filtered through cheesecloth, poured into the juice.
- Half a glass of sugar is poured into every 2 liters of liquid. If you wish, you can refuse to use sugar.
- The liquid is put on fire, brought to a boil and immediately distributed over sterilized jars.
- The containers are required to close the rhinestone, turn it over and wrap it in a towel.
If the drink was poured into unsterilized containers, the workpiece should be processed for 20 minutes (1 liter) and 40 minutes (1.5 liters). After sterilization, the drink is immediately sealed.
Isabella grape juice with sugar
Pure Isabella juice tastes too rich, and children will not drink such juice. But if you dilute it with water and sugar, then the harshness will go away, but the aroma will remain.
- 3 parts of grapes;
- 1 part sugar;
- 50 grams of sugar for every liter of water.
Wash and sort the grapes as in the recipe above. Next, you should grind the grapes in a meat grinder, or through a juicer. In this case, the juice will acquire a certain astringency due to crushed seeds, but this is a pleasant astringency, and a great benefit.
Recipes for making grape juice for the winter at home
Leave the squeezed juice in an enamel or stainless container overnight in a cool place so that the sediment sinks to the bottom. Pour the settled juice into another dish in the morning through a piece of clean garden hose, since if you drain it over the edge, the sediment will rise again. Bring the juice to a boil and simmer for another 15 minutes, removing the foam.
We sterilize the jars in the usual way, fill in the juice and roll up with sterile lids. Turn the cans upside down, wrap them up and let them cool completely. Then we transfer the jars for storage in a dark, cool place. After 2 months, the juice should become a little lighter.
No sugar is added, as the grapes themselves are quite sweet, but if the juice seems sour to you, sugar can be added to taste when you open the jar. If the juice is very concentrated, it can be diluted with water.
It is useful to drink grape juice on an empty stomach, eat before taking it, and after drinking the juice, do not forget to rinse your mouth with water, as fruit acids contained in grapes can contribute to the development of tooth decay.

The main ways to get juice from grape berries
The taste of a grape drink largely depends on its variety, maturity and preparation conditions. To understand how to make grape juice, you need to look at one of the options below:
- Manual. This method involves obtaining juice with your hands or a press, the efforts of which are given, again, by the hands. After manually squeezing the juice, it is filtered through cheesecloth or a sieve. For quick squeezing of the liquid, you can use a meat grinder or blender, but the next filtration steps will be the same.
- A juicer is the most common way to extract grape juice. The resulting liquid does not require additional filtration, and it takes a little time for the whole process.
- Juice cooker. Experts who make wine or juice every year have been using a juicer for a long time. The best option, in which you only need to harvest the crop and wash it under water, then it's up to a special electrical apparatus. The berries in bunches are placed inside the machine and are periodically stirred during cooking.
How to make grape juice at home
Turn the cans upside down, wrap them up and let them cool completely. Then we transfer the jars for storage in a dark, cool place. After 2 months, the juice should become a little lighter.
No sugar is added as the grapes themselves are quite sweet, but if the juice seems sour to you, sugar can be added to taste when you open the jar. If the juice is very concentrated, it can be diluted with water.
It is useful to drink grape juice on an empty stomach, eat before taking it, and after drinking the juice, do not forget to rinse your mouth with water, as fruit acids contained in grapes can contribute to the development of tooth decay.
And if after making the juice you still have grapes, then you can make marmalade from it - a delicious treat for children.
If you are a happy owner of a vine, then in the fall it is time to harvest and harvest grapes for the winter. One of the most popular grape harvests is homemade grape juice. Let's talk about how to close the grape juice for the winter.
For making homemade juice almost all grape varieties are suitable
, but nutmeg are considered the best for these purposes. To make juice from grapes, you need to select the most ripe, fresh and juicy brushes.
Grape juice in a juicer
The easiest way is to make homemade grape juice in a juicer - this useful kitchen unit will save you from fiddling with peels and seeds. For juicing homemade blue grapes sort out the harvested crop
, throwing out the spoiled and sluggish berries (you do not need to pick off whole grapes from the bunches).
Rinse the bunches thoroughly and place them in the container of the juicer. Do not try to plant too many grapes - the level of the berries should not be higher than the side of the juicer. If you want to sweeten the juice, add sugar already at this stage
by sprinkling them with berries.
Assemble the juicer: pour water into the lower container, put the container on top to collect the juice, and already on it - the container with grapes. Boil the juice collector hose before use. Be sure to attach a clamp to the hose. Place the juicer on the stove, cover and light the fire. Juicing takes about an hour
... After this time, you can remove the clamp from the hose and pour the juice into a pre-prepared saucepan.
Hot grape juice poured into sterile jars
and rolled up with sterilized tin lids. Since the juice in a juicer is prepared by steaming the berries, it turns out to be sterile, so there is no need to boil it again. The main thing is to quickly pour the juice into the jars and quickly roll it up.
In the process of juicing the berries will "settle". No need to put fresh grapes in the juicer
: wait until a portion of juice is fully prepared, roll it up in jars, discard the "used" berries and replace them with fresh ones to prepare the next portion of the drink.
Grape juice without juicer
If you don't have a juicer, you will have to to prepare juice by squeezing
... To do this, you need to separate the grapes from the branches, carefully sorting them out and throwing away those that are not ripe, damaged, lethargic or spoiled. The selected berries are washed in cold running water and squeezed out in any way: using a juicer, a press, through cheesecloth, etc.
Squeezed juice filter twice
through several layers of cheesecloth and poured into a saucepan. Heating the juice to 60 degrees, let it brew for several hours. After that, carefully pour the juice into another pan, making sure that all the sediment formed remains at the bottom of the old one.
Then the juice is put on the fire again, heated to 90 degrees
, poured into sterilized jars and rolled up with sterile lids.
Terms and conditions of storage of grape juice
If grape juice is harvested for storage, heat treatment is indispensable. Freshly squeezed should be drunk immediately. The sterilized drink can be stored in the refrigerator for about a month under a plastic lid. Grape juice, corked in jars, is stored for a year until the next harvest.
In early autumn, when the grapes are already ripe, they begin to harvest them for the winter. Winemakers prepare amazing, aromatic, but intoxicating drinks from these fruits. The hostesses have long gotten used to cooking jam and compotes from juicy berries. The simplest and most delicious preparation will be grape juice. To prepare it, you do not need a huge amount of time, effort and financial costs. The drink is perfectly stored and will delight with its taste all year round.
Cooking a dish step by step with a photo
Step 1
The necessary ingredients in order to prepare the juice from grapes for the winter: grapes (both green and dark), granulated sugar and water.
Step 2
First of all, we sort out the grapes: wash the bunches, dry them and remove the berries from the scallops. It is better to throw away spoiled and wrinkled ones.
Step 3
Now you need to get juice - use a juicer. By the way, on many Internet resources they write that a juicer is not desirable, they say, then the bones are crushed and the juice becomes tart. I certainly can't say it out: all my bones remained safe and sound. We pass all the berries through a juicer - as you can see, this is such a heterogeneous mass of indeterminate color with foam.
Step 4
I got about 4 liters of this liquid. Let it stand for an hour - so the foam will thicken and it will be possible to remove it, and strain the juice.
Step 5
Depending on the power of your electrical appliance, the cake may be of varying degrees of moisture, but in any case, quite a lot of juice remains in it. To make everything go into business, fill in the cake with 500 ml of water and mix everything.
Step 6
We put the pan with the cake on the fire and bring to a boil. Let the mass cool slightly, and then squeeze it out with gauze or a thin cloth. My advice to you: when you manually squeeze the juice, ALWAYS wear rubber gloves! Otherwise, your hands will itch for a long time, like after nettle burns. Grapes are very high in natural acid, which can cause unpleasant moments on the skin of the hands.
Step 7
After a long (about an hour) and persistent struggle with foam and cake, I got a little less than 4 liters of the most fragrant pure grape juice. Pour sugar into a saucepan with juice and put it on fire. It is not necessary to boil the juice - it is enough to warm it up to 85-90 degrees. This is not difficult to determine: when the juice starts to make such a peculiar noise and is getting ready to boil, you can roll it up.
Step 8
Do not forget to prepare the jars and lids in advance - they can be sterilized in any convenient way. I am used to doing this in the microwave - it takes about 7 minutes for 1 half-liter jar with 50 ml of water. I just boil the lids in a saucepan for about 5 minutes.
Step 9
Pour hot juice into jars. We roll them up or twist them (depending on the lid).
Step 10
Here is my wealth for the winter - homemade grape juice is ready. We turn the jars of juice with the lids down, wrap it with something warm (for example, a blanket) and let it cool in this position. Then we transfer it to the cellar or basement, and in winter we take it out and remember the warm days.
Successful and tasty preparations for the winter!
How to store juice
I would like, having prepared the juice for the winter, so that it stands for a long time and does not deteriorate. To do this, it is necessary to strictly observe the recipe and proportions indicated in it. Jars and lids must be sterilized for a long time, then they must be dried.
In the room where the finished product will be stored, there should be no sudden temperature changes, and even more so it should not fall below 0 ⁰С, but it should not be raised above +15 ⁰С.
Relative humidity, not higher than 80%, contributes to the fact that the cans will stand for a long time. Moreover, their contents will not deteriorate due to moisture ingress.
The product does not lose its beneficial properties for 3-5 years.
Making a vitamin drink from grapes is a healthy business. Providing the family with a supply of vitamins for the winter is within the power of every housewife.
Homemade grape juice
Ingredients:
Preparation
We wash the whole bunches of grapes in cold running water, remove the spoiled berries. Squeeze juice from grapes using a press.
How to make a grape juicer
The press for pressing grapes can be made both stationary and portable. This will depend on how the frame is attached to the bed. First you need to pick up containers into which the grapes will be poured. Old pots, buckets and even a tank will come in handy for this. Their sizes should not coincide a little. The bottom of both containers must be cut off. In a smaller container, holes are made with a drill so that the juice can flow freely. In the second container, a small part is cut out on one side from the bottom so that the juice can quickly fall into the pan.
The juicer should be made conscientiously, this is the only way it will last a long time. For the base, you need to use metal or solid wood. A metal sheet pallet must be fixed to the support (bed). It should have a sloped drain. Bumpers are made around the entire pallet, in addition to the place where the juice will drain. Pots are placed on top, while the smaller container with holes should be inside the larger one.
A screw press is required for such a juicer. To do this, you need to buy or order a screw somewhere, find the press itself (you can use a blanking flange) and a frame. The screw should have a lever on top that will move the entire system. The press is connected to the screw. Now all that remains is to collect the grapes, and you can start processing.
This version of the homemade press is not final. It all depends on imagination, as well as on what tools and materials are at hand. The grapes can be crushed with two rollers, feet or hands. The main thing is that the process of preparing the juice is simple. Then the family will be able to enjoy the delicious juice the whole winter.
Having received the juice in any of these ways, it must be consumed immediately or rolled up in jars. If this is not done, then the juice begins to ferment and slowly turn into wine.
You can also use a juicer to make juice at home. Then you will not need to boil the resulting product. It will already be heat treated. The advantage of this method is also the absence of the need to separate the berries from the branches themselves and to squeeze them.
How to choose grapes for juice
Half of the success depends on the correct choice of fruits. A drink is prepared from any grape variety, including white. The taste and benefits of each are excellent.
Using the best wine varieties, a healthy and tasty juice is obtained. It contains a high content of vitamins and optimal indicators of sweetness and acidity:
- Selection of berries. The drink is made from ripe juicy berries. Necessarily fresh. The fruits must not be damaged. Rotten specimens significantly spoil the taste of the finished juice.
- Of the white varieties, the nutmeg variety is more suitable.
Making grape juice at home is not difficult at all. After spending a little time in summer, the whole family will enjoy a healthy drink in winter.
Grape juice in a juicer
Nowadays, for many people who prefer a healthy diet, fresh juices from vegetables and fruits have become an integral part of their daily diet.
We will tell you how to cook grape juice in a juicer for subsequent canning.
A juicer is quite a convenient and fairly simple kitchen device (like a double boiler), with which you can get juices from fresh fruits (berries or vegetables). The principle of operation of the juicer is to heat fresh fruit with steam and separate the juice when exposed to high temperature. Some will say juicer juice is healthier. It should be understood here that juicers are devices for producing small amounts of fresh juice. Juice cookers are more suitable for obtaining a sufficiently large amount of juice and its subsequent conservation.
Making grape juice in a juicer is not difficult. It will take no more than 1 hour to prepare the juice, depending on the grape variety and the degree of ripeness of the berries. Throughout the entire process, you must carefully monitor that water does not boil out of the lower compartment of the device.
Recipe for grape juice in a juicer
To make juice from grapes at home, carefully sort out the harvested crop. We throw away the affected, spoiled and sluggish berries; it is not necessary to pick off the grapes from the ridges (that is, the brushes), especially when it comes to wine varieties in which the berries have a thin skin and a soft body.
Preparation
Rinse the bunches thoroughly and place them in the upper compartment of the juicer. Do not overfill the container - the filling level should not be higher than the rim. If the sugar content of the berries is low, and you want to slightly sweeten the juice, then adding sugar (sprinkling the berries on them) is better at this stage.
Next, we collect the juicer: pour water into the lower container, install a container on top for collecting juice, and then - a container with grapes and cover with a lid. Be sure to boil the juice collector hose before use.
We put a clamp on the hose, put the juicer on the burner of the stove and light the fire. After 40-60 minutes, you can remove the clamp from the hose and pour the juice into a pre-prepared enamel container (the pan can be made of food grade stainless steel).
Now we pour the hot grape juice into sterilized, steam-heated cans and roll them up with sterilized tin lids (or twist - depending on the type of cans). We prepare grape juice in a juicer by steaming the berries, so it turns out to be sterile and you don't need to re-sterilize it. In this case, you just need to quickly pour the juice into the jars and quickly roll up. Grape juice for the winter is ready! In such a product, of course, there are fewer vitamins, but more pectins.
It should be noted that in the process of making juice in a juicer, the berries will, as they say, settle. This does not mean that you need to put fresh grapes in the juicer. It is necessary to wait until the pledged and processed portion is completely cooked. We roll the juice into jars, and discard the waste raw materials. To prepare the next portion of juice, put the grapes in the upper container of the juicer again.
You can also make apple and grape juice in a juicer.
Grapes and apples are quite harmoniously combined in aroma and taste, in addition, apples contain an abundance of pectin and succinic acid, as well as many other very useful substances that are not present in grapes.
The process is carried out in almost the same way, only slices of apples (without seeds) are placed in the upper container of the juicer together with the grapes.
Such wonderful preparations for the winter will greatly diversify our daily menu.
Grape juice with seeds: how to prepare
The absence of a juicer and a juicer is not a reason to give up harvesting grape juice for the winter. It can also be prepared by hand. It will turn out to be no less tasty and rich. Yes, and it will not take much effort to prepare it.
- Sort the fruits thoroughly, discard the spoiled ones, rinse.
- After preliminary preparation, put them in a colander, fix it over a bucket or bowl.
- Squeeze out all the juice from the berries with your hands.
- Pour the liquid into a saucepan and strain it twice through cheesecloth.
- Then cook for 15 minutes.
- Pour into jars immediately and roll up.
Important! It is not necessary to add sugar to the juice. Even without it, it will turn out to be very sweet and will be well stored.

Grape juice is squeezed by two methods: mechanical and manual. In the first, special devices are used (blender, juicer, meat grinder, screw press), after the liquid is released, it is passed through a filter in the form of gauze or a very fine sieve.
When obtaining juice manually, a crush is used, due to which the berries are kneaded, and then the resulting liquid is filtered through a sieve or cheesecloth.

Harmful properties of Isabella grapes
According to experts, Isabella grapes can be dangerous when used as a wine base. The fact is that this grape variety, during fermentation, promotes the release of a fraction of methyl alcohol, which is dangerous to health and can lead to various pathologies of vital organs, including death. However, in order for a dangerous dose of methanol to enter the human body, you need to drink 2-3 barrels isable wine. Nevertheless, suspicious Europeans and Americans insured themselves and banned the production of wines based on the Isabella variety.
Squeezed grape juice
Grapes grow in most regions of our country. Not all grape varieties are suitable for fresh consumption, only the sweetest ones. However, for home winemaking, preferably wine and table grape varieties are used.
- grapes - 10 kg,
- granulated sugar - 2.5-3 kg.
1
We take unwashed (this is very important, otherwise fermentation will not occur) grape bunches and carefully pick the berries from them
2. In an enamel bucket, crush the grapes with your hands or with a crush in small portions until the juice appears strong.
3. Then cover the container with gauze and leave it warm for fermentation for about 4-5 days. Mix the mass twice a day with a wooden spatula.
4. After the pulp (crushed grapes) rises, put it in a colander to drain the juice and squeeze it through cheesecloth.
5. Next, pour pure grape juice into jars and add granulated sugar, mix.
6. Put on a washed medical glove on the neck of the can, pierce several holes in the fingers with a needle and tie it tightly with an elastic band in a circle.
7. Leave the wine to ferment for 2-3 weeks at room temperature. We follow the glove, at the beginning of the process it is inflated, and when it is deflated, the wine is ready.
8
After the yeast has settled, and the wine is clarified, and the "gurgles" cease, we carefully filter. While expressing wine, we make sure that yeast does not get into clean bottles, we seal with corks
9. We take out the grape wine in a cool place for about a month, and during this time we pour the wine into other bottles three times, leaving the sediment in the previous ones.
10. Then we defend the wine for another month in a cool place and we can taste it.
Using this grape wine recipe, you will get approximately 6 liters of semi-dry aromatic homemade drink.

How to make wine at home from grape juice
Before making wine at home from grape juice, you must not only choose the right berries, but also prepare special dishes. Rotten and badly damaged grapes must be removed, as they prevent the coloring matter from completely dissolving. The best grapes are table or wine varieties - white, blue, pink, or a mixture of both. A drink made from Muscat and Isabella grapes is very tasty and aromatic. For the preparation of a homemade alcoholic drink, oak barrels, glass or plastic cans are suitable, but in no case metal, as the wine will oxidize and darken.
Sugar in a classic wine recipe made from grape juice is used in a ratio of 1: 3 - one third of the weight of the grapes. But you can add sugar to your liking.
For better fermentation, it is best not to wash the grapes - just carefully tear off all the berries from the bunch, removing the remnants of dry leaves and rot.
In a saucepan or large basin, knead the grapes with your hands or with a wooden crush, so that juice appears. Cover with gauze and leave to ferment for 3-4 days in a warm place. To ferment the juice better, stir with a wooden spoon twice a day.
When the crushed grapes (pulp) rises upward, you will need to squeeze out the juice. Drain the fermented mixture in a colander and squeeze well with cheesecloth with your hands.
Pour the grape juice into jars, add sugar, mix with a wooden spoon and set for re-fermentation. Close the neck of the jar or bottle with a lid with a hole, into which insert a tube to drain the gas.
You can use a regular rubber glove - pierce a few holes in your fingers with a needle and pull over the neck. Leave the wine at room temperature. Fermentation usually takes place within two to three weeks. When the air bubbles in the water disappear (if you put on a glove, it will deflate), the homemade grape juice can be filtered. Pour the wine gently so as not to stir the sediment. It is good to close the bottles or jars with lids and put in a cool place.
Can be put in a cellar or refrigerator. After a month, the finished wine can be poured into small 0.5 liter bottles and tasted. From 10 kilograms of grapes and three kilograms of sugar, you get 6 liters of a great drink.
Now you can enjoy the fruits of your labors - pour chilled wine into glasses and invite your friends.
