Step 2. Crush the grapes well and mix. Add sugar at the rate: for each kilogram of grape berries - 500-600 g of sugar. Stir well again and leave alone for a week.

Important: for storing and mixing the grape-sugar mass, you must use plastic, wooden or glass dishes. The base for future wine should not be stored under a lid - it is best to cover the container used with gauze or a special lid with holes for air flow and the release of gases formed during fermentation.

Step 3. After a week, boiled cold water should be added to the fermented mass at the rate of 2 liters of water for each original kilogram of berries. Stir, pour into a bottle with a vent tube and leave for a month.

Step 4. After a month, strain the resulting wine and bottle. Cork tightly and store in a cool, dark place.

To prepare a grape compote, which, in addition to its pleasant taste, will also have a long shelf life, you will need:

  • a bucket of grapes;
  • 1-1.2 kg of sugar;

Step 1. Go through the grapes, separating the berries from the stalks, rinse them.

Step 2. Mash the grape berries until a homogeneous mass is obtained - pulp.

Step 3. Heat the pulp over low heat to 70-750. In no case should you bring it to a boil - this way the future juice will lose most of its beneficial properties.

Step 4. Squeeze the cooled pulp through cheesecloth, pass through a press or juicer - until liquid juice is obtained.

Step 5. Set aside the obtained juice until a sediment is obtained at the bottom. Drain the juice so that the sediment remains.

Harmful properties of Isabella grapes

According to experts, Isabella grapes can be dangerous when used as a wine base. The fact is that this grape variety, during fermentation, promotes the release of a fraction of methyl alcohol, which is dangerous to health and can lead to various pathologies of vital organs, including death. However, in order for a dangerous dose of methanol to enter the human body, you need to drink 2-3 barrels isable wine. A drink made from Muscat and Isabella grapes is very tasty and aromatic. Sugar in a classic wine recipe made from grape juice is used in a ratio of 1: 3 - one third of the weight of the grapes. But you can add sugar to your liking.

For better fermentation, it is best not to wash the grapes - just carefully tear off all the berries from the bunch, removing the remnants of dry leaves and rot.

In a saucepan or large basin, knead the grapes with your hands or with a wooden crush, so that juice appears. Cover with gauze and leave to ferment for 3-4 days in a warm place. To ferment the juice better, stir with a wooden spoon twice a day.

When the crushed grapes (pulp) rises upward, you will need to squeeze out the juice. Drain the fermented mixture in a colander and squeeze well with cheesecloth with your hands.
