How to prepare lingonberries for the winter without cooking
The first and main rule of long-term storage of lingonberries at home is to use only well-ripened high-quality berries, harvested in August-September. The biochemical composition and nutritional value remain high not only in wild species, but also in varietal plants that are cultivated in the garden or on industrial plantations. All the differences between cultivated and collected in the forest or in the swamp fruits are in different amounts of nutrients.
The varietal berry grown in artificial conditions remains medicinal. People who are going to eat lingonberries cooked without cooking for the winter should not forget about this. Method 1

Method 2
The fruits are placed in an enamel bowl and pressed with a wooden or ceramic (not metal!) Pestle. Then the crushed berries are thoroughly mixed with sugar, placed in sterilized jars, and covered with lids. Place in a refrigerator or other cool place.
What is the difference between these methods? The fact is that the lingonberry, twisted in a meat grinder, came into contact with the metal. You can cook it very quickly, unlike the one that you have to crush with a pestle. After standing for a month, the mass will look like jelly. But hand-crushed berries retain more vitamins.
Important! Vitamin C is destroyed most strongly when twisted in a meat grinder.
Contraindications
Lingonberry is so good in itself that the list of contraindications is not so long.
- You can not take lingonberries if your body is hypersensitive to the components of the berry.
- Lingonberries should not be taken by people with cholelithiasis and urolithiasis. Due to the fact that lingonberry substances destroy stone formations in the gallbladder and kidneys, you should not use it, so as not to cause an acute condition in the form of renal colic.
- The composition of lingonberry includes such components that enhance the secretion of gastric and intestinal juice, which is why it is prohibited to use it for diseases of the gastrointestinal tract, especially during an exacerbation, as it can cause harm.
- Acute heart failure.
- Liver disease during an exacerbation.
- Pregnancy is a relative contraindication, since moderate consumption of lingonberries will not harm either the expectant mother or the fetus, but will only benefit.

You can keep the lingonberries fresh for the winter by flooding them with water. First, ripe berries are carefully sorted out, rejecting all greenish, soft and even slightly damaged ones. Then they are washed, placed in an enamel, glass or wooden dish, filled with clean water and left for 3 days. After this time, the liquid is drained.
The fruits are laid out in glass, and preferably wooden containers, filled with fresh water and sealed. In a cool room, the berries will stay fresh throughout the winter due to the presence of benzoic acid in them.
Lingonberries will survive well if you just pour it with cold clean water. But you can add to the container:
- liquorice root;
- mint;
- spoiled milk;
- Antonov apples;
- bread crusts;

Lingonberries include a considerable number of culinary recipes. This is not surprising, because lingonberries can rightfully be called a traditionally Russian food. It is usually used to make jams, fruit drinks and jelly. But, probably, soaked lingonberries will be tastier. It is not inferior in its useful properties to fresh lingonberries. Such a harvest does not include preservatives, and storing lingonberry fruits not in a hermetically sealed container makes them even more useful.
For the recipe you will need:
- 5 kg fresh lingonberry
- 300 g sugar
- 4 l of water
- 5 g cinnamon
- 4 g cloves
Cooking method:
Lingonberries are sorted out, washed and dried with a paper towel. To prepare the syrup, the water is brought to a boil. Put sugar and spices (cloves and cinnamon) into the water. When the sugar dissolves in the boiling syrup, it is removed from the heat and cooled.
Lingonberries are laid out in a clean dish and poured over with chilled syrup. Cover the container with gauze, put a circle, and put oppression on the circle. The container with lingonberries is kept in a cold place (1 week). Then it can be consumed.
Lingonberries soaked with apples:
For cooking you will need:
- 1 kg lingonberry
- 5 glasses of water
- 500 g Chinese apples
- 3 cups granulated sugar
Lingonberries are washed and placed in a prepared container (alternating with thoroughly washed apples). All this is poured with cooked and well-chilled syrup. Then everything is done in the same way as when cooking soaked lingonberries. Instead of Chinese apples, you can take any others (Antonov's apples are best suited), which are cut in half before cooking. To add flavor, you can use lemon zest or cinnamon cloves. Syrup is boiled with these spices, then it will need to be filtered.

Preparation:
Sort freshly picked berries, wash in cold water and pour into prepared dishes. For pouring, dissolve sugar and salt in water, bring to a boil, cool and pour berries. To improve the taste, you can add peeled slices of aromatic apples, allspice, cinnamon. Cover the top with a linen cloth, put a circle and oppression.Withstand 6-7 days at a temperature of 18-20C or 8-9 days at 12-15C, then transfer the dishes with lingonberries to a cold place. After 25-30 days, the lingonberry is ready to eat.
Soaked pears with lingonberries:
For the recipe you will need:
- 10 kg pears
- 1.5 kg lingonberries
Pouring: for 10 liters of water - 10 teaspoons of yogurt, 2 tablespoons of salt, 1 tablespoon of dry mustard.
Arrange the pears in rows, sprinkle with lingonberries and cover with black currant leaves. Pour cold wort, cover with a cloth, put a circle and oppression. For the first 8-10 days, keep at a temperature of 18-22 ° C, making sure that the top layer of pears is covered with wort, and top up if necessary. Then transfer to a cold place for additional fermentation. After 1.5 months, the pears should be ready to eat.
Soaked lingonberries without sugar:
Sort fresh ripe lingonberries, rinse in cold water, put on a sieve, dry, put in large jars (at least 3 liters), pour cold boiled water without sugar. Do not put apples in such lingonberries. Soaked lingonberry gives the dishes a pleasant, spicy, sweet and sour taste. It is served as a seasoning for a variety of meat dishes, game dishes, etc. You can make a wonderful sauce from soaked lingonberries by adding spices to the berries.
