Why cranberries are useful - vitamins

As you may have guessed, a fairly large amount of ascorbic acid is concentrated in the cranberry berry, which, in fact, helps to prevent colds. And this happens by strengthening the immune system, which in the fall can just be weakened great.

In addition, it also stores such useful substances in its composition:

  • Organic acids (ascorbic, including).
  • Sucrose, which contains a very small amount, which means that this berry is considered dietary.
  • B vitamins, which are an indispensable component in regulating the work of all body systems.

Cranberries are known precisely for their high content of vitamin C, the concentration of which is equal to the amount of ascorbic acid in lemon.

It is unlikely that you can eat all the lemon in one go, but the same amount of cranberries will be eaten in a matter of minutes.

The fact is that cranberries contain a small percentage of sucrose, which is just such a "softener" of the very useful acid.

Lemon, in turn, does not contain sucrose, which is why sometimes it is so difficult for us to eat it with a calm face.

In addition, cranberries are quite gentle on the stomach, so that the acidity level will not be disturbed.

But today, this berry is considered the heart of any vegetable salad, and is even used as an addition to baked duck.

What can we say about conservation? Surely, some changes have appeared here, which will help us prepare preservation so that all the useful substances of the berry are preserved. By the way, in order to preserve the freshness of cranberries for a long time, it is not necessary to immediately start canning.

Cranberry recipe without boiling

This method of harvesting cranberries for the winter is the easiest.

  • 1 kg of cranberries;
  • 1 kg of granulated sugar.

According to this recipe for preserving cranberries for the winter without cooking, you do not even need to grind them. Prepared, thoroughly dried after washing, the berries, without rubbing, are laid out in sterile dry jars, abundantly sprinkling each centimeter layer with granulated sugar.

  1. Banks are filled with berries, not reaching two centimeters to the edge.
  2. The remaining sugar is poured into each jar almost to the very top.
  3. Each jar is immediately sealed with a sterile lid and stored in a cool place.

What else can you do with fresh cranberries? Drying is a very popular option. The process is carried out using a special kitchen unit for drying berries, vegetables and mushrooms, or in the old fashioned way - in the oven. To dry the berries in the oven, you must first rinse it, and then boil it for a couple of minutes in boiling water. Next, spread the foil on a baking sheet, sprinkle the berry and send it to the oven for 4-5 hours. Remember that the layer should not be very thick. Every 30-40 minutes the berry must be monitored by turning it over.

When drying is over, do not be ridiculous to remove the berry. At room temperature, it should cool down and “reach” for another 1-2 hours. And after all these manipulations, we put the cranberries in glass jars for storage.

Cranberries in powdered sugar

According to this recipe, you can cook mashed cranberries for the winter with a lower sugar content than using the classic technology. Therefore, the recipe can be interesting for those who have to limit their intake of too much sugar. True, it is still advisable to store this workpiece in a cool place - in the refrigerator or on the balcony in winter.

For manufacturing, you will need all the same ingredients, only the proportions will be slightly different:

  • 1 kg of cranberries;
  • 600 g granulated sugar.

The cooking process, as before, is simple:

  1. First, you need to turn half of all the granulated sugar into powder using any convenient device: a coffee grinder, a blender, a food processor.
  2. The cranberries are prepared for processing in the usual way. Particular attention should be paid to drying the berries so that they do not have excess moisture on them.
  3. At the next stage, the berries are ground in a convenient way, turning them into puree, if possible.
  4. Add 300 g of the resulting icing sugar and mix the grated cranberries for some time, achieving a uniform consistency.
  5. Sterilize a small volume of jars (0.5-0.7 liters) and lids.
  6. The prepared berry puree is laid out in sterile jars, not reaching a little to their edges.
  7. Circles are cut out of parchment (baking paper) with a diameter exceeding the diameter of the opening of the cans by several centimeters.
  8. There should be exactly as many circles as there are jars of pureed berries prepared.
  9. Each circle is placed on top of the berry puree and covered with several tablespoons of granulated sugar on top.

  10. The jars are immediately sealed with sterile screw caps.
  11. The sugar cork formed on top will reliably protect the cranberry puree from souring.

What can be made from cranberries. Cold preparations

We've already covered a lot about what can be made from cranberries. There are still a lot of recipes in stock. A very quick and healthy preparation made from cranberries and honey. A jar of such a natural medicine will be just a lifesaver in the period of colds. Two or three tablespoons of cranberries with honey for breakfast for tea, and your immune system will say firm no to flu and SARS.

The cooking process in this case is very similar to the previous one, only instead of sugar, honey is added to the twisted cranberries in a ratio of 1/1. You can grind the berry using a blender, gradually adding honey. This will make the mass more homogeneous. We pour it into jars. We put it for storage in the cold.

Cranberry juice without sugar

The most useful are cranberry blanks prepared for the winter without sugar. One of the options for such a blockage is natural cranberry juice.

Products:

  • Cranberries - 3 kg
  • Water - 450 ml

Cranberry juice preparation process:

  1. Grind washed and dried berries in a meat grinder.
  2. Transfer the cranberry puree to an enamel pan and heat to 60-70 degrees, adding water.
  3. Rub the resulting mass through a sieve or squeeze out with gauze to remove the cake.
  4. Heat the juice to a temperature of 75-78 degrees.
  5. Filter the drink again and boil. 2 minutes after boiling, pour the juice into sterilized jars, seal with lids. Cool the seam by folding it upside down, under a warm blanket at room temperature.
