Characteristics of Rocambol garlic

Description of the Rocambol variety

Rocambol is a perennial plant belonging to the lily family. Its aerial part is very similar to a regular leek, as Rocambol is a hybrid of this onion and garlic. That is why it is often called onion or onion.

The main features of Rocambol garlic:

  • The heads of both the first and second year are suitable for food. First years, though small, are in no way inferior in taste to large second years.
  • One bulb of the first year is larger than the largest heads of garlic.
  • Average yield - 3 kg per 1 sq. m.

The culture in the first year of life forms large bulbs, consisting of one prong. Their weight is 45-50 g. If the climate is warm enough, then in the second year of life the culture gives a bulb much more than the previous one with a weight of one clove up to 80 g. This is a thermophilic culture, under favorable circumstances the bulb grows up to 500 g.

  • Trunk. Thick, high density. Height 80-120 cm - depends on soil fertility.
  • Leaves. Dense and broad, pale green in color, with a silvery waxy coating. On the stem there are 6-9 leaves 30-60 cm long and 3-6 cm wide. The leaf plates are flat, with longitudinal stripes, pointed towards the apex. The leaves have a slight fold in the center.
  • Inflorescences. Large, attractive - the plant is often used as an ornamental plant. The inflorescence is spherical, collected from small purple flowers. There are no seeds in inflorescences.
  • Bulb. In the third year, it usually has 4 to 6 cloves. The diameter of the head is 6-10 cm. The length of one lobule can reach 15 cm.

Barnacle blooms in July. A flower-bearing arrow 1 m long appears at the plant. In a two-year-old garlic, stolons with baby bulbs of 1.5-4 g are formed at the bottom. They have a yellow-brown husk, in contrast to a large white onion. If the stolons are short, then the babies are tightly pressed against the denticles and covered with the white husk of the mother bulb.

Reproduction of garlic Rocambol

The cultivation of a plant is determined by the two-year development cycle of Rocumboll, care and cultivation. Air bulbs (babies) ripen underground, around the bottom. Usually there are 15–20 of them. Bulbules are harvested when harvesting from biennial plants.

The advantage of the reproduction of Rocambol garlic: in the first year, a bulb grows from children, commensurate with a chicken egg. Gardeners use it for food: the taste does not differ from the taste of the mother plant.

reproduction of garlic

To obtain seed, it is recommended to plant the one-toothed tooth again. A full-fledged bulb will grow from it. Large and healthy ones are selected for reproduction. They are dried in a shaded place for 3-5 days. Then the roots and tops are cut off, wrapped in paper and stored until planting in the refrigerator fruitter.

The head is divided into teeth, the upper covering scales are carefully removed. Affected parts are discarded, healthy ones are planted in a prepared ridge.

What types and varieties are there?

There are two types of garlic:

  • in the selection of which a hairstyle was used.
  • in the selection of which grape onions were used.

In the Russian Federation, only two varieties of onion are officially recognized:

  • Pearl. A frost-resistant variety bred by Moscow breeders. The culture is mid-season, suitable for cultivation in all regions of the Russian Federation. Cultivated similarly to winter garlic. It has long arrows - up to 60 cm, leaves are wide - 3 cm. The heads are flattened, with white scales. Weight - 50-55 g. The number of cloves - 4-6 pieces. The pulp is yellowish, with a pungent taste. From 1 sq. m collect up to 2 kg of garlic.
  • Janissary. New winter-hardy variety. Suitable for all regions of Russia. Leaves 40 cm long, 3.5 cm wide. Weight - 95 g. Number of cloves - 6 pieces. The scales of the bulb are creamy, and the flesh is yellowish.

Our gardeners grow another variety, of Belarusian origin - White elephant... It was bred specifically for regions with harsh winters. It has no flower arrows. Bulb weight - 150-200 g. Number of cloves - 6-7. The cut flesh is yellowish. The variety is resistant to fusarium. Productivity - 3 kg per 1 sq. m.

Types of garlic Rocambol

Biologists say the plant is a cultivar, not a hybrid. There are several types of very large Rocumboll garlic:

several types

  1. Janissary. Newly bred giant garlic Rocambol. Differs in a balanced, spicy taste. Heads 6-7 cm.
  2. White elephant. Of the cultivated garlic, the largest garlic is Rocambol. Value: resistance of the bottom to decay, winter hardiness. Special feature: no flower arrows. Beige teeth (there are 7 of them in the bulb). Medium spicy.
  3. Pearl. The most fruitful and spicy. With competent agricultural technology, 4 kg / m² are obtained. Disadvantage: active shooting.

In culture, they are unpretentious. They differ in the color of the covering scales, ripening period, taste. Among other onion varieties, the Rocambol garlic varieties are not well known. The most popular Janissary. Gardeners prefer a common name: elephant garlic.

  • cleanses the body of toxins;
  • improves appetite, activates the production of gastric juice;
  • strengthens the gums;
  • strengthens hair and promotes hair growth - when applied externally;
  • relieves nasal congestion - thanks to the secreted essential oils.

Rocambol, helping with various diseases, cannot be the main drug. Because of its spiciness, this vegetable is consumed in moderation. Possible side effects:

  • headache;
  • deterioration of vision;
  • diarrhea;
  • skin irritation;
  • vasospasm.
  • children under 3 years old;
  • pregnant women;
  • people with diseases of the kidneys, stomach, gallbladder;
  • with internal bleeding.

Preparing for landing

Rocambol is grown as simple garlic. The soil and planting material are prepared for planting crops. It is better to buy domestic planting material for planting - it tolerates frost better. Foreign varieties are only suitable for regions with a warm climate.

The soil

In the middle lane and in the more northern regions, Rocambol is planted in areas illuminated by the sun throughout the day. Due to shading, the number of teeth in the head decreases, diseases appear.

Features of the preparation of the site for the landing of Rockumbol:

  • The best option is neutral soils. If the soils are acidic, they are alkalized during autumn digging.
  • For digging, humus or compost is introduced into the ground - 5-6 kg per 1 sq. m, wood ash (500 g) and bone meal (150-200 g).
  • The soil in the beds is loosened 20-25 cm deep. Giant garlic gives good yields in high beds.
  • The culture is demanding on its predecessors. Prefers legumes and melons, cabbage, cucumbers. Unwanted precursors are garlic, onions and potatoes, since the pests remaining in the soil after them will actively attack Rocambol.

Planting material

Children, prongs or one-year-old bulbs are prepared for planting. Usually, up to 15 children grow on one bulb. The planting material is placed in a refrigerator for a month. After hardening, the material is disinfected - the teeth are placed in a solution of potassium permanganate for 20 minutes. Instead of potassium permanganate, you can use boiled ash - a glass of ash is needed for 1 liter of boiling water. Boil time - 10 minutes. When the broth has cooled, the teeth are placed in it.

Proper care and cultivation

Planting and care is not much different from the usual manipulations associated with the cultivation of the usual garlic, "Rocambol" is easy to plant, and is distinguished by a large percentage and quality of seedlings after sowing, as well as a rich and healthy harvest.

Like any plant, this garlic loves fertile soil, therefore, before you start planting cloves, you should think about the process from all sides and remember the basic rules:

  • The soil in the garden should be made loose and fertile, it is good if cucumbers, cabbage or any representatives of legumes were growing on this section of the garden before.
  • The place should be well raised, without stagnant water, the illumination should be one hundred percent.
  • Soil preparation is carried out long before planting planting material: the earth is filled with humus, compost components, wood ash.
  • Planting can be carried out either in early spring or late autumn, "Rokambol" is not afraid of frosts and winters well under a layer of snow.

It is good if the teeth are calibrated before planting. This is necessary so that later stronger shoots do not shade small ones. The best option would be a split planting: large and small teeth in different beds.

Row spacing is also important for crop growth. Since the plants grow quite powerful, you should keep at least 25 cm between them.

After the cloves are embedded in the ground, it is lightly sprinkled with earth and peat mulch - this will provide additional "food" for young shoots. Garlic should be watered constantly, especially at first, until the seedlings are at full strength.

The moisture content of the soil for garlic plays an important role. Loosening will accelerate growth and give oxygen access to the root system.

Provided that the leaves of the plants turn yellow, it is necessary to feed them with chicken droppings or mullein, which is infused for several days and diluted in a ratio of 1X 10.

Landing requirements

Rocambol is planted at any time - in spring or autumn. If the region has very harsh winters, then it is better to choose a spring planting, since garlic planted in autumn risks freezing. If you plant garlic in the fall, then you need to insulate the planting.

Landing requirements:

  • Pre-winter. Planting is done three weeks before the onset of frost. During this time, the garlic will take root, but will not have time to germinate. For the middle lane, a suitable landing time is in the first half of October.
  • Spring. Planting material is planted as early as possible - enough for the soil to warm up to +6 ° C. Short-term frosts are not terrible for the garlic, it will take root perfectly at + 3-5 ° С. The recommended planting time for the middle lane is from mid-April to early May.

Step-by-step planting instructions

Step-by-step instructions for autumn (pre-winter) planting:

  • Planting scheme, depending on the choice of planting material - in table 1.
  • After planting, the bed is sprinkled with mulch - for example, straw or sawdust. Mulching protects the onion from low temperatures and retains moisture.
  • Winter Rokambol is ready for harvesting in the first half of August.
  • When preparing the beds, the furrows are made deeper than during spring planting.
  • Unlike spring planting, planting material can do without disinfection;
  • 6-8 cm of humus is laid at the bottom of the beds.

In this video you can see how to properly plant Rocambol garlic:

What will grow next year?

ripe fruit of several cloves

Step-by-step instructions for spring (spring) planting:

  • A month before planting, the seeds are hardened and disinfected. Planting is carried out according to the scheme 20 x 25 - between the planting material and the rows, respectively.
  • If the weather is dry, the beds are watered.
  • Spring Rocambol is harvested in the second half of September.

Reproduction

Garlic "Rocambol" multiplies with the help of cloves, which are formed during the season. After digging, they are divided, the cup located below is removed, and after a short treatment in potassium permanganate, they are planted in the garden along with the husk. As for the children, they need to be cleaned of scales, since it can be extremely difficult for them to break through.

Onion of this species winters well and can easily withstand low temperatures, however - 15 for a long period are destructive for him, he is able to die. In each separate region, it is planted at different times, this is due to the natural characteristics of each separate zone and region.

As already noted, disembarkation can be carried out both in spring and before winter. Its use usually occurs from autumn to spring, it is then that we experience a deficiency of vitamins and nutrients in the body.

How to care?

Rocambol not only looks like garlic in appearance, but also in agricultural technology. There is nothing special about growing garlic. Crop care is reduced to watering, fertilizing and loosening.

Top dressing

The culture is responsive to feeding. The task of vegetable growers is to grow large and tasty bulbs, and this requires fertilizers. Top dressing is recommended:

  • Immediately after germination - nitrogen fertilizers. For example, ammonium nitrate - 10-20 g per 1 sq. m.
  • When 4 leaves are formed. Bird droppings (1 glass) and urea (1 tbsp. L.) Are dissolved in a bucket of water (10 l). For 1 sq. m make 3 liters of such a mixture.
  • 2-3 weeks after the second feeding, the planting is fertilized with a nitrophoska solution. 2 tbsp. l. bred in a bucket of water - this amount is applied per 1 sq. m.
  • During tying - phosphorus-potassium fertilizers. For this purpose, a solution of wood ash is suitable - 1 glass is diluted in 10 liters. For 1 sq. m of the area, 5 liters of solution are introduced.

Watering

Rocambol loves moisture. Young animals especially need watering. Due to the abundant moisture, the culture forms a voluminous bulb. The flower beds are watered 1-2 times a week. Watering frequency depends on weather conditions. If it is cloudy, one watering per week is enough. The best irrigation method for this crop is drip irrigation.

Weeding

Weeding and loosening are a must when growing Rocumboll. The soil is loosened as soon as the seedlings come out. Do this carefully, trying not to damage the fragile shoots and their roots. Thanks to loosening, the soil is enriched with oxygen necessary for the roots, and at the same time weeds are eliminated. They loosen the soil after precipitation or watering, and not only the aisles, but also directly near the necks of the plants.

The flower arrows are removed - this contributes to an increase in the mass of the bulb. There are still no seeds in the inflorescence.

Cultivation of rockumball

It is not difficult to grow a rich harvest of an amazing culture. It is enough to follow the rules of agricultural technology.

Soil selection and preparation

Rocambol prefers areas well warmed by the sun.Soils with a high content of organic material or a decent proportion of compost are ideal for it. For each square meter of the site, you need to add 1-2 handfuls of bone meal.

It is recommended to plant Rocumball in a sunny place in a well-prepared, loose and nutritious soil. The culture is actively growing and developing after cabbage, zucchini, legumes, cucumbers, which were grown using rotted manure or compost.

Rye, rapeseed, alfalfa, lupine, oil radish are also good predecessors for rockumball. All these plants are excellent green manures and suppliers of organic matter, nitrogen, soil microorganisms. Potatoes are not suitable as a precursor for rocumball, after which giant onions can infect fusarium and nematodes.

The plant tolerates drought well enough, but, despite this, it is better not to plant it in a dry place. Both in spring and in autumn, thorough preparation of the soil is required before planting the teeth of rockumball.

The soil should be loosened to a depth of 5-8 centimeters, and if it is dense - up to 25 centimeters. The surface of the site must be cleaned of stones, manure, plant debris, which make it difficult to sow to the required depth, and leveled. Loosening too often is not necessary. This can deteriorate the soil structure, lead to excessive dryness and accelerate humus mineralization.

An important rule is to avoid loosening during excessive moisture or dryness of the soil, as this can cause lumps to form. They begin to prepare the soil for growing rockambol immediately after the previous crop has been harvested. In spring, soil cultivation is limited to harrowing, mixing organic fertilizers with the soil with a cultivator and re-harrowing.

How to plant a hairstyle in the spring?

In the southern regions, giant garlic can be planted in autumn and spring. The beds prepared in the fall are directed from north to south. In the spring, Rocambol is planted in the following sequence:

  1. 30 days before planting, the cloves are disinfected and placed in the refrigerator.
  2. The soil is preliminarily loosened to the depth of the shovel bayonet (20-25 centimeters).
  3. The bulbs intended for planting are sorted by size and, depending on this, are planted in the beds. In this case, there will be uniform friendly shoots.
  4. Introduce 2-3 glasses of wood ash and 5 liters of rotted compost or humus per 1 square meter of area. Level the surface of the bed.
  5. Rockumball teeth are planted in moist ground to a depth of 9-10 centimeters at a distance of 12-20 centimeters between the teeth and 30-35 centimeters between the rows.
  6. It is recommended to plant young bulbs no deeper than 4 centimeters. First, large one-toothed teeth will grow out of them, and next year - a head of garlic onion. A full-fledged head with teeth will be formed in another year.
  7. It is recommended to mulch the garden bed with straw, peat, sawdust or compost in a layer 1-3 centimeters high. Mulch contributes to better warming up of the soil in spring, retains moisture and prevents the formation of a hard crust on the surface.

Planting Rockumball in the fall

It is recommended to plant winter rockambol in the soil 3 weeks before the onset of frost, usually in early October. During this time, the plant is steadily rooting, but does not have time to release sprouts. Planting garlic onions in the fall is carried out in the following sequence:

  1. For 24 hours, soak the teeth in a solution of potassium permanganate with a concentration of 0.05%.
  2. Disinfect the planting material. Add 1 liter of boiling water to 1 glass of sifted wood ash, boil the mixture for 10 minutes. After the solution has cooled, drain the light liquid and lower the planting material there for 2-3 hours.
  3. Plant the teeth to a depth of 9-10 centimeters at a distance of 15-20 centimeters from each other.
  4. In areas with low winter temperatures, it is recommended to sprinkle the beds with rockumbol with a layer of mulch 3-4 centimeters thick.
  5. When the first shoots appear, the soil in the aisles must be carefully loosened.
  6. If necessary, the soil near the plant can also be loosened, taking care not to damage the young roots and fragile sprouts.
  7. Depending on the air temperature and natural precipitation, the vegetable must be watered regularly 1-2 times a week at the rate of 10-12 liters of water per 1 square meter of the plot area.

Diseases, pests and prevention

Garlic is affected by common diseases and pests of onions and garlic:

  • Fusarium. It especially often affects areas where the predecessor is potatoes. If fusarium appears, diseased plants are removed, and Rocambol is not planted in this place for 3-4 years.
  • White rot. To prevent rot, acidic soils are limed, reducing the dose of nitrogen fertilizers.
  • Rust. Prevention is similar to that of fusarium.
  • Onion moth, onion fly, nematodes, root mite, thrips.

Disease and pest control methods are shown in Table 2.

Pest control measures

Disease control measures

  • phytosporin;
  • copper chloride;
  • Bordeaux liquid

General preventive measures for plant protection:

  • Selection of healthy planting material.
  • Cleaning and burning of plant residues.
  • Re-planting at one site only after 4 years.
  • Disinfection of planting material in fungicide with 2-3% concentration.
  • Thorough drying of children after harvesting - the sun's rays kill fungal spores.
  • Before planting, the soil is treated with Bordeaux liquid 1% or Fitosporin 15%.

The fungicide treatment is stopped 3 weeks before harvest.

Harvesting and storage

The harvesting of the giant garlic begins when the lower leaves dry out, and the upper ones turn yellow and numb - this happens in the month of September. Storage features:

  • Garlic plucked from the ground is tied in bunches and dried, hanging down with its heads.
  • Shake off the dried soil, cut off the leaves - leave a small tail, and put it in storage.
  • Store onions in a dry room at a temperature of 9 ° C.

The keeping quality of Rocumboll is good - if proper conditions are provided for it, it retains its commercial qualities until February, and then begins to germinate.

At Rocumball, not only annual bulbs and biennial heads are eaten - they are eaten fresh, dried, salted and pickled, but also young leaves. Onion garlic is widely used in cooking.

Harvesting

Basically, Rocambol garlic is grown for use in the autumn, winter and spring, therefore, when collecting and storing, several rules must be observed so as not to spoil the product. All procedures are quite simple and do not require special skills or equipment.

Usually Rocambol garlic is harvested in September. The lower leaves of the plant should dry out, and the upper ones should turn yellow and stick. But it is impossible to determine the exact date, since the ripening period depends on the region, growing conditions, soil, fertilizers applied and other parameters.

Harvesting

If the weather is rainy, then you need to wait until the ground is completely dry. The heads are taken out of the soil carefully so as not to damage them and in no case should they be hit on the ground or on a shovel to shake off the ground. The pulp of this type of garlic is quite tender and, if damaged, the product can be completely spoiled.

After harvesting, all the garlic must be dried. This can be done on the site by spreading the vegetable on a blanket or put under a canopy for long-term drying and airing. If it is not possible to do this process outdoors, the garlic is tied in bunches and hung in a well-ventilated room.

A bit of history

The history of this most mysterious representative of the Liliaceae family (Lilaceae) began in the heyday of great civilizations. At first, the wild-growing rockumbol settled on the sunny edges of the forests of Central Europe. However, it soon spread to the southern borders of modern Italy, and from there came to Egypt. Interestingly, the Egyptians attributed divine origin and supernatural powers to all cultures of the family of Luke (Allium).

Oddly enough, later the Egyptian bow was less fortunate than its brethren. Rockambol, widely known in China and Korea, is considered a rare, almost exotic vegetable.

A bit of history

As soon as this plant is called: hairstyle, Egyptian onion, Spanish garlic, or simply onion, but most often it is still rocumball.

Rocambol: calories, nutritional value, vitamins and minerals

The plant looks like a leek in appearance. Its height reaches 80 cm. But the bulbs are already more like garlic - they are divided into 4-6 cloves. Record-breaking bulbs weigh 100 g and have a diameter of 7 cm. Although seasoned gardeners claim that in fertile soil they can reach a weight of 300 g and grow up to 10 cm in diameter.

The Spanish garlic cloves really taste like onions and garlic. However, they are not as pungent as in garlic, and there is no bitterness in them.

In 100 g of rockambol contains:

  • proteins - 6.36 g;
  • fat - 0.5 g;
  • carbohydrates - 30.96 g.

The calorie content of a hybrid of onion and garlic is 149 kcal per 100 g.

Interesting facts about rockambol

For the first time a vegetable was grown in Spain. The locals liked the mild taste and began to replace onions or garlic in salads for which Mediterranean cuisine is famous. At first, it was eaten only raw, and only then they began to use it for adding to the hot and harvested for future use.

Until now, biologists are at a loss where to assign a vegetable that combines the taste of garlic and onion, although preference is given to the Lukovs. Since the variety was cultivated in the Middle Ages, it was not possible to determine exactly which plant species were taken as a basis. Indeed, in appearance, Rocumball resembles garlic with arrows, and the conditions that must be provided correspond to the cultivation of leeks.

The variety was brought to the countries of Central Asia in the 17th century. At first, they began to widely cultivate it, and then again returned to the usual onions and garlic. And now rockambol is found more in the wild. In limited areas, the crop is grown in China, Korea and Thailand.

The variety was brought to Russia only at the end of the twentieth century. Gardeners appreciated the taste of the product, and biologists gave it a name - hairstyle. Rockambol has not gained popularity, as in the countries of Central Asia, and it is grown in limited quantities.

This is explained by the need to create special conditions - elephant garlic is very capricious:

    It is necessary to cut off the inflorescences so that the formation of tubers begins.

As soon as the leaves begin to turn slightly yellow, the tubers must be immediately dug out, otherwise the heads begin to rot.

  • Too wet season - the crop will kill the fungus, dry - tubers are not formed.

    Rocambol should be stored in the same conditions as regular garlic. Before sending it for storage, it is necessary to thoroughly inspect the bulbs for damage and decay.

    Best of all, onion and garlic are stored in wooden boxes, in cloth bags or in nets. The optimum storage temperature is from -5 ° C to + 3 ° C. At room temperature, Spanish onions can be stored for 2-3 months.

    An excellent way to store rockumbol is to preserve it. There are many different recipes, but here are just one of the simplest and most popular:

    1. Separate the teeth. Fill with water heated to a temperature of 50-60 °. Insist 24 hours. The next day, prepare the marinade: add a glass of sugar to 1 liter of water, 1 tbsp. l. salt, 3-5 bay leaves, black peppercorns (3-5 pieces), a glass of vinegar (9%). Put the garlic in a bottle, pour boiled marinade and roll up.
    2. Put the cleaned, separated and washed teeth in a half-liter jar, pour boiling water over. Place the jar in a pot of boiling water for 5 minutes. Then remove, drain the water and pour the marinade: 0.5 water, 1 tbsp. l. vinegar (9%), 1 tbsp. l. sugar, 5 g of salt. Roll up the jar.

    The canned food should be stored in a cool place, for example, in the refrigerator or cellar.

    INSPIRING ❤ PLEASING ❤ HELPING

    Rocambol is called a hybrid of onions and garlic. The underground part of the plant is a large bulb, which can contain one large clove. But more often two-three-four ... and little "kids". The ground part is a stem, these are thick leaves and an arrow is a flower. According to my observations, cutting off the arrow does not give a significant increase in the bulb. And wonderful balls look great on the beds - I cut them off when they bloom, well, or in the process of flowering for bouquets.

    I take care of it in the same way as for garlic, I plant it before winter, at the same time as garlic. I feed in spring with complex fertilizer. Then two more top dressings - chicken, then ash. But, I noticed, if you grow it without fertilizing, then the result is still good, the bulb is large, juicy. Unlike garlic, which grows poorly in my area without top dressing. Harvesting about a month before the garlic. In spring it rises very early, literally the snow has just melted and confident, friendly shoots are already making their way out of the ground. Cold-resistant, hardy, tolerates leaf trimming, drought and excessive moisture.

    Elephant Garlic Recipes

    Chicken with rocumball
    Despite the fact that rocumbole belongs to the Onion family and tastes like garlic when raw, when added to a hot dish, it gives it a nutty flavor. It is impossible to describe what the dish will look like, it must be tried.
    Rocumball Elephant Garlic Recipes:

    1. Paste
      ... The upper coarse husk is removed from the slices and the inner soft white shells are left. Spread the cloves on foil, sprinkle with salt, ground black pepper, thyme sprigs, sprinkle generously with olive oil. Wrap the foil tightly and put the bundles in the oven to bake. It is enough to preheat the oven to a temperature of 160-180 ° C. When the garlic becomes soft (it takes about an hour), unfold the foil, allow the slices to cool, and then squeeze the pulp out of the scales. To prepare the pasta, add 1 tablespoon of garlic pulp, honey, 1.5 tablespoons of rice vinegar and 4 tablespoons of olive oil to the blender bowl. The paste is salted and pepper to taste. Served with meat and fish dishes, mixed with pasta.
    2. Harvesting rockambol for the winter
      ... The simplest way: peeled large teeth from 10 heads are cut lengthwise into 2 parts. Chili pepper, 2 pods, peeled from seeds and white partitions, cut into 2 pieces lengthwise. Vegetables are laid out in sterilized one and a half liter jars so that all have the same amount of garlic and pepper. Pour boiling water over the jars, cover with lids, let stand for 10 minutes. After 10 minutes, the water is drained, and the jars are again covered with lids. A marinade is cooked from 1 liter of pure water, pouring a tablespoon of salt and sugar into boiling water, 10 peas of black peppercorns and 4 peas of allspice. Just before turning off the marinade, 1 tablespoon of strong vinegar is poured into it, at least 9%. 1.5 bay leaves are put in each jar of garlic, boiling marinade is poured and the lids are rolled up. If white rockumbol is "boring", then a different recipe is used. The amount of garlic and water is the same. Before you put the chopped prongs in the jars, pour a few "straws" of fresh beets and pepper, sweet peas, 2 pieces for each jar on the bottom. You do not need to pour boiling water over the jars; they immediately begin to cook the marinade. Salt and sugar are used for it, 50 g each. Before turning off the container with the marinade, 100 ml of 6% apple cider vinegar are poured into the pan. Jars of pink garlic are sterilized for 10 minutes before rolling.
    3. Chicken with rocumball
      ... The cut carcass is cut into portions. Mix the chopped peeled rocumball, 600 g, a bunch of thyme and sage (you can take fresh herbs or dried ones), add some salt, pepper.The meat is immersed in this mixture and removed in a closed container for a day in the refrigerator to marinate well. After pickling, each piece is fried in sunflower oil until golden brown, transferred to a saucepan, the marinade is poured, water, a little sesame oil and an almost full glass of port or sherry are added. Stew the chicken over very low heat for about an hour. It is convenient to use a multicooker to prepare this dish.
    4. Bread with rocumball
      ... In a blender, grind several types of cheese in the same amount: cheddar, mozzarella, parmesan, add 2 tablespoons of melted butter, 1 tablespoon of olive oil, half a glass of homemade mayonnaise, in the manufacture of which olive oil was used. Baked garlic (the recipe is described above) is added in the amount of 1-1.5 tablespoons. Bring the mixture to full homogeneity, add salt, if necessary, add pepper. It is advisable to use only ground green pepper or red, black will destroy the nutty taste. A table loaf is cut into thin slices, each is coated with pasta on both sides and put in the microwave or on a baking sheet, which is then put into the oven. The dish is considered ready when a golden brown crust appears on the bread. In the microwave, slices of bread are crunchier and more appetizing, but slices from the oven can be reheated.
    5. Fresh salad
      ... Cut 2 tomatoes without removing the skin, 2 cucumbers, peeling the skin, 1 yellow bell pepper, rockamboll arrows, dill and parsley. Regular slicing. All ingredients are mixed. The dressing is prepared in a separate bowl: 1 tablespoon each of Dijon mustard and pumpkin seed oil, add some salt. Season the salad, and you can taste it right away.

    Traditional salads with garlic acquire an interesting taste: cheese, beetroot, carrot. In order not to lose the nutty flavor, unusual for an ordinary root vegetable, it is advisable to season salads not with the usual mayonnaise, but with light unsweetened yogurt or sour cream.
