Collect the black people; description and preparation of yellow and variegated hedgehogs

A rare edible mushroom called "blackberry" differs sharply from others, has an unusual structure, special taste and smell. This is the name for a whole group of organisms that are similar in appearance, but belong to different families.

Before a detailed study of the properties of blackberry mushrooms, they were combined into the general genus Gidnum. The unusual shape, bright colors, frequent arrangement in piles and rather large sizes gave rise to many fears and legends about this inhabitant of the forests. For example, the people of the Yezhovik colony are called "rings of witches".

Types of mushrooms

It is noteworthy that the name "hedgehog" unites at least ten separate species of mushrooms, often endowed with very distant external similarities. However, one common characteristic they have is the hymenophore (the lower surface of the cap) in the form of small thorns. It is partly because of them that mushroom pickers are so uncomfortable with herd's men: the thing is that the outgrowths of the hymenophore are very brittle, they quickly come off, staining the rest of the "catch".

So, hedgehogs are called representatives of several families at once: hedgehogs (yellow and reddish hedgehogs), bankers (black hedgehogs, felt, variegated and rough), hericia (coral, comb and antennae), exsidia (gelatinous hedgehogs).

It is noteworthy that, although representatives of almost all of the listed species theoretically grow on the territory of Russia, you can not even count on meeting some of them in the forest. Many black hairs - mushrooms are not just rare, but included in the Red Book. Therefore, it does not make much sense to describe them in detail, but instead it is better to closely study the most common edible mushroom from this group - the yellow hedgehog.

The variegated Hericium is another edible species that appears more often in pine forests. This mushroom is classified as an autumn one, as it grows closer to autumn (in August - November). In some areas, the black-headed black man's man is called "elk" or "chicken".

Hericium is motley

Hat. The variegated Hericium has a rather large (up to 20 cm and more) brownish cap of an impressive appearance. From above, it is densely covered with large growing scales, which are "laid" according to the principle of tiles. Tiny mushrooms have a dark cap, which then turns brownish and then brownish-black. The lower part of the cap is covered with whitish spines, which acquire a brown or rusty-gray color with age.

Leg. The coloration of the leg of a variegated hedgehog is the same color as the cap. You can find mushrooms with a purple stem.

Motley Hericium is good only at a young age. At this time, the grayish pulp of the mushroom has a pleasant tart smell. As it ages, it looks more and more like a cork. Bitterness appears, which spoils the taste of variegated hedgehog.

In our forests, one more species is occasionally found - the rough hedgehog. It is not necessary to collect it because of the pungent taste. This mushroom is easily distinguished by its reddish-brown stem.

The hedgehog mushroom growing in coniferous or mixed forests, mainly under the pines, is referred to in different reference books as edible or conditionally edible.The taste qualities of all types of hedgehog (variegated, yellow and others) are low, however, these mushrooms may well be used in cooking, since they do not contain toxic substances.

We bring to your attention a photo of various species of the hedgehog mushroom, as well as a description of these gifts of the forest and recommendations for their use.

Hericium yellow - general characteristics

The yellow hedgehog or Hydnum repandum has several names. It is known to specialists as notched hidnium and notched dentinum.

The “visiting card” of this mushroom is its cap. It is of a delicate cream shade, and its underside is strewn with very brittle "needles" of the same color as the surface of the cap. The diameter of the cap varies from three to twelve centimeters and, despite its rigidity, it is quite fragile. Young mushrooms have convex caps, with a well-perceptible floral aroma and slight pubescence. In their "older" counterparts, they are depressed, with a clearly visible depression in the center. At the same time, the color of the pulp is also different: the younger the mushroom, the lighter it is.

The leg of the notched barnacle is usually somewhat lighter than the cap, and rather thick. Moreover, it can be elongated, as a result of which the mushroom can be confused with a toadstool.

You can go on a "quiet hunt" for yellow hedgehogs from July to September. They feel comfortable in any soil, in deciduous, coniferous, and mixed forests, but most often they live among birches. At the same time, mushrooms often grow in so-called "witch circles" and even grow together with hats and legs, as if in a round dance. They love moss and coolness very much.

Characteristic features of the variety

Blackberries can be of various types. It can be leg-cap, while the leg is not always located in the center of the cap, and that, in turn, is rarely symmetrical.

There are varieties that look shapeless, branched, without characteristic mushroom outlines.

Appearance and photos

In the photo, these mushrooms, justifying their names, are more reminiscent of needle urchins, stalactites or sea corals, and the description of their forms and places of distribution often causes surprise and disbelief. Reaching the size of a human head and one and a half kilogram weight, some species manage to settle right on the branches of coniferous trees, mix with mosses, standing out against their background with their bright shades.

Morphology (species differences)

The main feature of hydnums are peculiar thorns or thorns on the underside of the cap or completely constituting the entire fruiting body. The thorn-shaped hymenophore (spore-bearing layer) has no plates or tubules, its spines are rigid, fragile, sometimes reaching 20 cm in length.

Place of distribution

Unpretentious mushrooms live in the humid temperate climate of the Northern Hemisphere, preferring to grow on the trunks of trees in coniferous and deciduous forests, both living and felled. Some live on breaks in the bark, on stumps, moss mats. More often they form large colonies.

Eating

Little-known and not very popular blackberries belong to the fourth category, some taste like chanterelles, others are somewhat similar to the taste of seafood or nuts with a sweet-fruity flavor. Young specimens are eaten, because with age, the fruit bodies become more rigid and bitter. The strong flavor allows these types to be used for seasonings and sauces.

Composition and calorie content

In terms of its chemical composition, the mushroom boasts a high content of dietary fiber, proteins and carbohydrates, as well as a wide range of macro- and microelements. Beneficial features

Hydnum repandum is a mushroom that is not only widely used for food, but is also actively used by traditional medicine specialists due to its unique chemical composition.

So, the biologically active elements present in the yellow hedgehog are:

  1. Campesterol. In terms of its molecular structure, this substance resembles organic cholesterol. Once in the body, campesterol combines with “bad” cholesterol and promotes its natural excretion from the body.
  2. Glutamic acid, to which the mushroom pulp owes its piquant taste, promotes muscle tissue regeneration and is a source of energy that is not inferior to glucose.
  3. Aspartic acid helps to normalize the functioning of the endocrine system. In addition, it promotes the synthesis of growth hormones.
  4. Potassium is responsible for maintaining water and electrolyte balance. It also helps to normalize heart rate and blood pressure readings.
  5. Nicotinic acid is an active participant in protein synthesis and energy metabolism.

The presence in the diet of meals from a black man's man can replenish the reserve of nutrients in the event that for some reason a person refuses to eat animal proteins. In particular, the pulp of this mushroom helps to recuperate after intense physical activity.

In addition, the yellow hair man:

  1. Boasts a pronounced antibacterial effect. The substances that make up it help fight E. coli, staphylococci, streptococci. Mushroom pickers with experience are well aware: if you accidentally scratch or hurt yourself in the forest, you should apply the milky juice of a barnyard to the wound. It will prevent infection and stop the inflammatory process. Naturally, this does not exclude the need to treat the wound with an antiseptic after returning home.
  2. Helps to increase vitality, build muscle mass during active sports.
  3. It helps in the fight against depression, improves mood.Helps stabilize the nervous system, normalize sleep.
  4. Accelerates the elimination of toxins and toxins from the body, improves peristalsis.
  5. Helps to remove "harmful" cholesterol, increases the elasticity of the walls of blood vessels, increases their tone.
  6. Helps restore radiance to the skin, making hair more shiny and silky.
  7. Stimulates the production of red blood cells, normalizing the blood formula.

The healers of antiquity were already aware of the medicinal properties of the hedgehog. So, in the Chinese medical treatises of the past centuries, there are recipes for tinctures based on this mushroom, which help to lower blood pressure and improve sleep. In addition, ointments used for skin diseases have long been made from these mushrooms, as well as space masks, which effectively nourish the skin and have a tonic and rejuvenating effect.

Features of variegated blackberry (video)

They are harvested from July to October, but it must be remembered that the pulp of autumn mushrooms is often bitter. They grow only on calcareous soil, they love moisture very much, they feel good among mosses. They enter into symbiosis with different trees, both deciduous and conifers. White hedgehogs came to Russia relatively recently and are found only in the southern regions belonging to the forest zone.

The blackberry mushroom grows in all Russian forests in the temperate zone. The colder the region, the less often you can find it. Certain species are distributed in more southern regions, and the blackberry loves humid subtropical forests: it can be found in the Caucasus (foothills), in the Primorsky and Amur Territories, in the Khabarovsk Region.

A favorite place for blackberries is a dry coniferous forest on sandy soil (some species are on limestones). Mushrooms can grow singly, or they can form "witch's rings". Another type of blackberry loves dead trees. Such mushrooms grow on:

  • stumps;
  • woody substrate;
  • deadwood.

They can grow in loose hollows, and in the place of breaks and broken off branches of a living tree.

Blackberries are harvested, depending on the type of mushroom and the growing season, from June-July to October-November.

Variegated blackberry

Variegated blackberry

The motley blackberry is also called a chicken, a hawk, a tiled and scaly mushroom due to its variegated colors and the appearance of the upper part of the cap: it is covered with large scales, which resemble one tile, another chicken plumage.

A velvety, slightly convex in a young mushroom, the cap of a variegated blackberry reaches 20-25 cm in diameter, a concavity appears in the middle. The color of the cap is dark brown, with darker scales, the flesh of a young mushroom is white and juicy, as it grows, it acquires a grayish tint and becomes brown and dry, firm in the old mushroom.

Yellow blackberry

Some scientists generally consider white and yellow (reddish-yellow) blackberries to be one type of mushroom, with the difference in the color of the caps clear from the name. A significant difference can be considered a more delicate taste of white blackberries. The cap of these types of mushroom is velvety, uneven, with the edges bent down (umbrellas), abundantly covered with short spines below, which easily crumble from touch.

Combed blackberry

Combed blackberry

Crested blackberries (other names - mushroom noodles, lion's mane) grow on trees, this round or irregular growth grows up to one and a half kilograms in weight and up to 20 cm in diameter. Its entire surface is covered with long thin thorns that make up the spore-bearing layer, similar to wavy hair or thin noodles. The white, dense flesh turns yellow as the mushroom ages and as it dries.

Coral blackberry

Coral blackberry

Coral blackberry, also called coral mushroom or trellis blackberry, looks the most exotic. It really resembles a bright white coral bush covered with 1-2 cm long thorns.In fact, this is not a bush, but a highly divided mushroom cap, reaching 30 cm in diameter. The fibrous and firm pulp of coral blackberry has a pleasant taste and smell.

Its peculiarities include the fact that it grows in different climatic zones on different trees: in the southern regions it can be seen on oak, linden and elm, and in places with a temperate climate, the mushroom settles on birch and aspen.

All species of this mushroom have been studied in scientific laboratories for their medicinal properties. And the following turned out.

  • Coral blackberry is a potential cure for Alzheimer's disease and is a good anthelmintic.
  • Blackberry - lowers cholesterol levels, inhibits uncontrolled growth of cancer cells, is a strong immunomodulator.
  • White and yellow blackberries - significantly slow down the growth of cancer cells (sarcoma, carcinoma, stomach cancer), destroy staphylococci and bacteria that cause stomach and duodenal ulcers, and lower cholesterol levels.
  • Blackberry comb - has a hypoacid effect, protects the gastric mucosa with increased acidity of gastric juice, heals wound surfaces and ulceration of the stomach and intestines, inhibits the activity of pathogenic bacteria and fungi, is an effective antitumor agent (pancreatic cancer).
  • Due to the different morphology of the blackberry mushrooms, preparation may vary. Some mushrooms can be salted, pickled and dried (variegated blackberries), while others can only be fried.

    The general rule for cooking for all types of blackberries is that it is best to take young, dense caps without visible damage for cooking.

    If, by the color of the pulp, you can suspect that the first youth of the mushroom has already passed, but you still want to cook it, you will have to boil it for about ten minutes, then drain the water, rinse the mushroom and then fry or stew it. This treatment will help get rid of the bitter taste. Drying the boiled mushroom is not worth it.

    A very old mushroom is not suitable for food, and not only because it is bitter: it has hopelessly spoiled dried pulp.

    By the way, some types of blackberries find unexpected uses: Norwegian producers of natural sheep yarn extract the pigment from the scaly mushroom, which gives the wool the color of the sea wave. For this, only old mushrooms are used.

    The blackberry mushroom can be called an old and good friend, whose useful properties and qualities have not yet been fully understood by us. But now it's time to get to know him and enrich at least your culinary world with dishes from this mushroom.

    A source

    The appearance and taste of blackberries resembles a chanterelle, although these mushrooms are not relatives. Blackberries are difficult to confuse with poisonous or any other representatives of the mushroom kingdom. The main distinguishing feature is the peculiar thorns on the underside of the cap. The upper part of the cap is smooth or pimpled.

    Like chanterelles, blackberries grow in large colonies and are almost never affected by pests. There are more than a dozen species of blackberries, many of which are listed in the Red Book.

    Despite the fact that the mushroom has a pleasant smell, not every gourmet will eat it. In terms of taste, it occupies the fourth category. For culinary purposes, only young mushrooms are used, since mature individuals begin to taste bitter. To eliminate the bitter taste, the raw materials should be boiled.

    French cuisine has many mushroom recipes for main dishes, as well as mousses, julienne, appetizers or side dishes. The powder, made from dry specimens, is used as a condiment that adds a savory flavor to dishes.

    Unpretentious mushrooms have spread throughout the temperate zone of the Northern Hemisphere, including the vast territory of Russia. Blackberries prefer to settle in both coniferous and deciduous forests.

    The hedgehog-like fungus grows on tree trunks, usually birch, oak or beech. It settles on both live and dead wood. Plant hedgehogs love warm and humid climates. The fruiting season begins in mid-autumn and lasts until the first frost.

    Blackberries originally belonged to the Gidnum genus. Subsequently, scientists, having identified differences between the species, divided the genus into families. Most of them are quite rare, and some of them are included in the Red Book.

    Of all the known species of this mushroom, it is the lion's mane that is characterized by the maximum number of beneficial properties. It contains antioxidants, phosphorus, calcium, iron, vegetable proteins, polysaccharides and vitamins.

    Eating blackberries has the following effects on the body:

  • improves the functioning of the respiratory system;
  • contributes to the successful fight against depression and hyperexcitability;
  • has a therapeutic effect on the digestive tract;
  • normalizes the emotional state;
  • smoothes the symptoms of Alzheimer's and Parkinson's;
  • lowers cholesterol levels;
  • strengthens the body's defenses;
  • normalizes metabolic processes;
  • normalizes hematopoietic processes;
  • prevents the occurrence of malignant tumors.

The presence of fatty acids, polysaccharides and phenols fight cancer cells like chemotherapy. As a result, tumors dissolve or shrink. The extracts obtained from the fungus are used in the production of agents for combating fungal, viral and bacterial infections. In traditional medicine, ointments for skin diseases are made from it.

The shelf life of fresh mushrooms is short, only 2-3 hours. Then the fruits begin to darken. If it is necessary to preserve the crop for a longer period, it should be placed in the refrigerator, following several steps before this:

  • to get rid of pests, mushrooms must be soaked in salt water;
  • let the water drain and remove damaged areas;
  • place in a deep container and cover with a paper towel.

It is recommended to boil the harvested crop in order to soften the aromatic forest product. After this procedure, it can be fried or stewed. Although boiling is not a strict rule, it improves the taste of the mushroom. For processing mushrooms for the winter, it is recommended to salt, freeze or dry them.

Harm and contraindications

The restrictions on the use of the product are practically no different from the medical prohibitions relating to other mushrooms. So, they should be excluded from the diet for people suffering from pancreatitis and disorders in the work of the biliary tract. In addition, dishes made from black hairs are not suitable for those who have been diagnosed with gastritis with high acidity and any liver diseases. Allergy sufferers should use this mushroom with caution.

It is also worth recalling that any mushrooms must be excluded from the menu of children under the age of five, as well as pregnant women.

Growing at home and in the country

The hedgehog does not lend itself well to industrial cultivation and, moreover, has a very specific, pronounced spicy taste, therefore it has not received wide recognition in cooking. But true connoisseurs may well grow this mushroom in their summer cottage. Planting material is bought in specialized stores. It is a wooden stick with spores. Tiled sarcodone can be planted in open ground from April to October, in protected ground - at any time of the year. Spores germinate in wood. Freshly cut logs, cleaned of shoots, are good for this. The length of such a beam should be at least 1 m, and the diameter 15–20 cm.

Before transferring the planting material to the wood, it is soaked and holes are made in it every 10 cm, 4 cm long and about 1 cm in diameter.After laying the mushroom sticks, the logs are covered with foil and placed in a warm dark room. Water it 2-3 times a week.

After the appearance of the mycelium, the decks are brought to light. After 5-6 months, the crop will appear. For the winter, a shelter should be organized over the log.

IMPORTANT!

Work with planting material should be done either with sterile gloves or after having disinfected your hands.

Taste and use in cooking

Hericium yellow is a mushroom that is not very popular, although its taste is excellent. Moreover, unlike many other mushrooms, it almost does not decrease in size during heat treatment due to the fact that its flesh is very dense.

It is noteworthy that, in spite of the fact that the black man's mane is a yellow mushroom, it is certainly edible, in cooking it is still recommended to use only young specimens. The thing is that in old mushrooms, the pulp acquires a distinct bitterness. At the same time, in young hedgehogs, it is very pleasant to the taste, has a characteristic aroma with notes of walnut and a slight sourness.

Hericium yellow are suitable for pickling, cooking and drying. They can also be fried. It is curious that in France and some other European countries, these mushrooms are used as a side dish accompanying meat and fish dishes. They are usually served with a variety of sauces. They are also added to salads.

Please note that it is better to remove all spike-like outgrowths from the hymenophore before sending your "catch" to a saucepan or frying pan. The thing is that during heat treatment they fall off, as a result of which your roast runs the risk of turning into a kind of porridge-spread.

As noted above, there are many culinary uses for this mushroom. First of all, of course, hedgehogs can be dried. To do this, thoroughly clean your "catch", remove the needles from the back of the cap and spread the hedgehogs in an even layer on the prepared surface. When they are a little dry, they can either be strung on a thread, as our grandmothers dried mushrooms, or put in an oven preheated to 35 ° C. The finished product must be packaged in glass jars and carefully sealed.

French mushroom sauce

Another option is to make a fragrant mushroom sauce according to a French recipe.

To do this, you will need not only fresh (400 g), but also dried (15 g) mushrooms, a glass of dry white wine, as well as one onion, celery stalks (200 g) and a few cloves of garlic. Dried hedgehogs should be thoroughly washed, placed in an enamel container and filled with cold water so that it completely covers them.

While the mushrooms are soaking, you need to prepare the vegetables.

To do this, finely chop a medium-sized onion and squeeze out three garlic cloves. Wash the celery stalk, remove the outer shell and leaves from it and chop thoroughly.

Throw the dried mushrooms in a colander, and then transfer to paper towels to absorb excess moisture. After that, finely chop them.

The next step is to pour 50 g of vegetable oil into a frying pan with high sides, heat and add vegetables and dried hedgehogs. Cooking the mixture should be covered for five minutes, over very low heat, stirring occasionally to avoid crusting. After that, the mixture is sent to a blender, wine and water are poured into the same place, and butter is also added. The crushed workpiece is salted to taste and stewed for three minutes over very low heat.

Distribution and fruiting season

Instructions on how to cook fried mushrooms are characterized by extremely simple rules. First, you should rinse each mushroom and peel (remove the remnants of myceliums from the end of the legs). A dry frying pan should be greased with vegetable oil and heated on the stove. Next, you need to cut the hedgehogs into pieces of approximately the same size and pour into a hot pan. Mushrooms should be cooked over a low heat of the stove, in the middle of the frying process, you will need to pour out finely chopped onions and bring the dish to readiness.
Hericiums are fried with the addition of chopped onions

  • The secret to the amazing softness of the dish lies in braising the mushrooms under the lid in sour cream, added a couple of minutes before they are completely cooked.
  • Do not grind too small with slicing, as mushrooms can decrease in size under the influence of temperature.

Hericium yellow grows in European, North American, Siberian and Far Eastern forests, including in the northern regions. Its mycelium develops in symbiosis with the roots of deciduous and coniferous trees. Fruit bodies ripen in forests and shrubs, especially often in sufficiently illuminated places with a predominance of birch. They readily grow on calcareous soils with moss litter.

Yellow urchin bears fruit from summer months to autumn frosts, appearing in a massive wave by the last decade of August and in the first weeks of September.

Hericiums or blackberries are called mushrooms, which were previously assigned to the Gidnum family, and today they belong to different families and genera. There are many types of hedgehog. The most common ones will be discussed in our article.

Characteristics of the blackberry mushroom. Hat, pulp, leg

Since all members of the blackberry family have different shapes and sizes, the appearance of many of them resembles chanterelles.

Description of blackberries:

  1. The mushroom cap can be white, cream, brown, blue, gray, and even black. On the underside or above there are thin needle-shaped tender processes. The cap circumference of young specimens is 3-12 cm, but in some mushrooms it can grow 20 cm or more. In young blackberries, it is spherical, but as it grows, it falls off, forming a fossa inside. In a coral mushroom, the cap resembles coral branches, and in a comb mushroom, boiled noodles hanging down.
  2. The flesh of blackberries has a dense and soft texture, but as they grow, it becomes dry and tasteless.
  3. The barrel-shaped leg can grow up to 6 cm long, with a circumference of up to 2.5 cm. In some specimens, the lower part is presented in the form of a cone.

Medicinal properties of blackberries

It has numerous medicinal properties that have been identified as a result of various laboratory studies:

  1. 1. Coral blackberry has an antihelminthic effect and is recommended for people with Parkinson's and Alzheimer's.
  2. 2. Variegated - lowers blood cholesterol levels, neutralizes cancer cells and strengthens the human immune system.
  3. 3. Yellow and white - stops the development of cancer, fights bacteria that cause stomach ulcers, lowers blood cholesterol levels.
  4. 4.Comb (lion's mane mushroom) - protects the walls of the gastrointestinal tract during gastritis with a high level of secretion, has a healing effect in case of stomach ulcers, fights various bacteria and fungi, inhibits cancer cells in the pancreas.

Mushroom tincture can be used to treat viral diseases and fungi. The pharmaceutical industry uses blackberries for the manufacture of burn ointments.

Hericium comb can be found in places with a temperate humid climate; it is harvested before winter frosts.

Soup with hedgehogs

Before making Vegetarian Yellow Hercules Soup, you need to process the mushrooms as described earlier in this article. Then the mushrooms need to be placed in a pot of boiling water, where bay leaves, salt, spices and diced potatoes have already been added. Mushrooms are boiled for 10-15 minutes. The chopped onion and garlic clove must be fried in rapeseed oil. And then toss the frying into the soup. This first course takes about 20 minutes to cook. At the end of cooking, you can add chopped herbs to the soup - dill, parsley, onions.

Description

Blackberry mushroom - photo and description of how to cook

The mushroom got its name from thin, fragile thorns of various lengths growing on the bottom of the cap and extending to the top of the stem. It is impossible to prick these thorns, but they give a certain resemblance to a hedgehog to a mushroom. By the way, both blackberries and blackberries are called, these are equal names.

It is noteworthy that there are several types of this mushroom, and the name of each species, in turn, has many synonyms. This is due to the fact that the blackberry has a very wide habitat, and in each area it is called differently.

Outward monotony is not observed in a friendly family of blackberries. Some species have spreading caps and look like chanterelles (and even in taste), others are rounded, and still others are generally similar to outlandish corals. Some species of this mushroom are listed in the Red Book, so if you come across them, do not cut them, let them grow and multiply. In general, outwardly, the blackberry is so peculiar that it cannot be confused with any other mushrooms - neither with poisonous nor with edible ones.

From a culinary point of view, these mushrooms can rather be attributed to conditionally edible (some species need special treatment), but from the point of view of the pharmacopoeia, blackberries are a valuable medicinal raw material.
