Royal mushrooms (golden scales), false and edible

In some exotic restaurants such a dish is found - Korean-style coral. In reality, the main ingredient is not the inhabitants of the sea - it's just unusual variety of mushrooms... The most common name is coral mushroom, but it has many alternatives: ice, snow, royal, gelatinous.

In the East they call him silver ear... Under natural conditions, it looks like frost among greenery, it has a white color. Previously, only royal families and some representatives of the aristocracy of China and Japan could eat these mushrooms. Because of this fact, the product received one of its names.

In addition, this type of honey agaric regulates the proper functioning of the thyroid gland.

Spread: often found in deciduous forests, as well as in coniferous forests of swampy areas throughout Russia.

Photos of royal mushrooms will help novice mushroom pickers distinguish this species from false mushrooms:

Boletus royal

Boletus royal - Boletus regius

In another way, it is called the Royal Boletus or Royal Boletus.

External signs

Mushroom cap

The mushroom stands out sharply from the rest of the boletus with its expressive hat, which has a reddish - pink, violet - red or bright pink color and a marble - speckled pattern. In mature mushrooms, the color of the hat is paler.

The surface of the hats is usually smooth or with light mesh cracks, the diameter reaches 6-15 cm.

Bolette royal is born with a convex hat, which later becomes like a pillow. The caps of some boletus mushrooms open completely and form a depression in the middle.

The flesh is yellow and bluish when cut.

The bottom is formed by a free tubular mass of tubes reaching a length of 25 mm, with a deep fossa at the stem. It has a yellowish or greenish color.

Ripening of the fungus is accompanied by the appearance of elongated smooth spores of a brownish-olive color.

Stipe

Boletus royal builds up a leg about 6 cm thick and 15 cm high, with a thickening at the base.

The legs are painted brown - yellow, the top is decorated with a thin yellowish mesh.

Growing places

The royal white mushroom prefers deciduous forest, mainly consisting of beech, grows well on limestone and sandstone. Borovik is widespread in the Caucasian territory, and occasionally appears in the Far East.

Boletus fruiting occurs in June - September.

Similar species

In appearance, this mushroom looks like a beautiful Borovik, only that the leg is not yellow, but red, and the flesh turns blue faster and more intensely.

Edibility

The dense pulp of this royal mushroom is not only beautiful, but also pleasant to the taste (the royal boletus is similar in taste to the rooted boletus), and has a characteristic mushroom aroma. The mushroom is good in boiled, stewed and fried form, great for drying, salting and pickling.

Its pulp contains natural antibiotics and biologically active substances, vitamins C, D, A and B1. It is considered a delicious mushroom.

Where do autumn royal mushrooms grow?

It is worth noting that edible species of royal honey agaric grow on damaged tree trunks, old, long-felled stumps. They can also be found on the ground next to the roots of dead deciduous and coniferous species. Fruiting of golden scales or royal honey agarics begins in August and continues until the end of September. Residents of the Primorsky Territory can pick these amazing mushrooms from mid-May to mid-September.

Where else do royal mushrooms grow, and which trees do they prefer? Usually this species of honey agaric settles on the trunks of deciduous trees, especially on alder or willow, sometimes it chooses birch and birch stumps, less often - coniferous trees in swampy areas. Take a look at the photos below, showing how the royal mushrooms look on the trees in the forest:

Sometimes even experienced mushroom pickers, due to the rare appearance of golden scales, confuse them with false mushrooms that grow in the same territories. Therefore, we suggest that you carefully read the photos of edible and false royal mushrooms:

As already mentioned, scales or royal mushrooms are edible mushrooms. However, before using it, it must be boiled in salted water for 20-25 minutes. Since royal mushrooms have excellent taste, they are used in appetizers, salads, first and second courses. Flakes are especially great with fried or boiled potatoes. In addition, many housewives make preparations for the winter from these mushrooms: pickled, salted, frozen and dried.

Sometimes honey agarics can be found in pine forests and spruce forests. What does a royal mushroom look like if you find it in a coniferous forest? Usually, flakes collected in deciduous forests are different from those growing in conifers. The first difference between honey agarics found in pine forests is the dark color of the cap and scales, and the second is the bitter taste. However, royal mushrooms contain a lot of vitamins C, PP and E. In addition, there are only 22 calories per 100 g of flake, so the calorie content of this species is very low. That is why they are useful for vegetarians and those who follow a low-calorie diet. In terms of the content of phosphorus and calcium, royal mushrooms even compete with fish.

Experts ranked royal mushrooms in the IV category of edibility.That is why in other countries they are not eaten and not even collected, since this category abroad refers to inedible species. However, in Russia they are prepared in the same way as ordinary autumn mushrooms. They are pre-boiled in salted water and only then the first courses are fried, stewed or cooked. In addition, royal autumn mushrooms are used in other culinary recipes: they prepare mushroom stew, julienne, make caviar, pates, sauces, hodgepodge and mushroom fillings for pizzas and pies.

Royal mushroom hats, reminiscent of prickly balls, are very good to pickle or salt. However, each mushroom must undergo primary processing: cleaning from scales and forest debris. The main taste of golden scales is hidden in the caps. After a long boil, the legs become hard and dry.

Although golden flake is widespread on the territory of Russia and is well recognizable, it is not collected so often. Perhaps this is due to the fact that very few people are familiar with this type of mushroom. However, true connoisseurs of mushroom delicacies put it on a par with autumn mushrooms and even boletus mushrooms. We offer you to watch a video of collecting royal honey agarics in deciduous forests by lovers of "quiet hunting":

Is golden flake edible

Royal honey mushrooms have their own useful properties and contraindications. Still, they are primarily edible mushrooms, although some experts classify them in the fourth category due to their specific taste. However, it is enough to soak and boil the golden flake, as it acquires a great taste.

Royal mushrooms are used like other mushrooms. They put it in salads, boil soups, make pie filling and mushroom caviaradded to vegetable stew. In addition, golden flakes are harvested for future use - pickled and salted. Moreover, if it is advisable to put only hats in the dishes, since they are more delicate, then mushroom legs are also used in winter preparations.

How to distinguish royal mushrooms from false mushrooms (with photo)

Often royal honey mushrooms are called willow, since it is on the willows that it is harvested. These mushrooms grow almost from mid-summer until frost. Inexperienced mushroom pickers may confuse an edible mushroom with an inedible moth. How to distinguish royal mushrooms from false inedible mushrooms? False honey moth grows only on the ashes, as well as old fireplaces, overgrown with grass and shrubs. Has a bright color, bitter taste and unpleasant odor. Although the pulp is juicy and firm, it is not eaten due to its smell. The fungus can pose a serious health hazard. Therefore, we suggest comparing the photo of the royal honey and the false one:

There are several more royal species of honey agarics, which are considered conditionally edible.

For example, slimy scaly, which is very similar to the royal golden scaly. The caps of young mushrooms have a bell-shaped shape, which becomes concave as the mushrooms grow, and the edges of the cap rise. If the weather is rainy, then the pulp becomes slimy and sticky, which was the name for scaly - slimy. The stem of this mushroom becomes hollow over time, and the ring on the stem disappears completely. Slimy scales grow only on decayed wood from mid-August to early October.

Another false royal honey cinder flakesis considered inedible. The shape of the cap at a young age of the fungus is hemispherical, and in mature it becomes completely spread. The color of the cap is very bright - orange-brown, the edges are covered with scraps of bedspread. The leg of the scale, especially its lower part, is densely covered with brown fibers. The ring, inherent in real mushrooms, is not visible at all on the leg.

Common flake is considered conditionally edible, which is similar to royal mushrooms of honey agarics. Although it has medicinal properties, it still has one drawback - hallucinogenicity.You can eat it, but only after a long heat treatment. Boil this species for at least 40 minutes and only then eat. Collect this type of mushroom very rarely, usually only those who know how to cook it. After all, experienced mushroom pickers know that it is strictly forbidden to consume ordinary flakes with alcohol. Opium contained in this form, in interaction with alcohol, can have unpredictable consequences for the body.To know how to distinguish royal mushrooms, we suggest looking at photos showing these differences:

Having become well acquainted with them, you can safely go to the forest for royal mushrooms. However, if you are still not sure of your knowledge, it is better not to take risks, but to collect only those fruiting bodies that are familiar to you.

Mushrooms

- one of the most popular mushrooms in the Russian Federation. The crop yields several times a year, and experienced mushroom pickers can collect tens of kilograms of product in one ripening wave. Of greatest interest are winter and autumn representatives of the family, since they are famous for their bright aroma and excellent taste of fruit bodies, and also grow in colonies, which greatly simplifies the process of searching and collecting.

However, one more subspecies of the plant we are considering is worthy of attention - royal honey mushrooms or golden scales. Not many people collect them due to lack of knowledge. The name of the mushrooms speaks for itself, the culture is worth paying more attention to.

False doubles

The most common false double of the edible royal honeydew is considered to be the inedible fire scale (Рholiotа flammans). This variety does not contain toxins in its pulpbut the too bitter taste of the fruit bodies makes them unsuitable for food use. A common saprotroph is characterized by a hemispherical or conical, convex and flat-convex cap, with curved edges, covered with dry scales of a bright yellow or yellow-orange color.

The mushroom pulp is yellowish-orange or brownish, with an indistinct earthy aroma and an unpleasant taste. The plates are of a narrowly adherent type, often located, grayish-yellow or brown. The area of the peduncle is hollow, with the presence of a fibrous-membranous ring, with a surface covered with bright yellow or brownish scales. Fungal spores are yellowish-brown, oblong. The fruit bodies of this species grow massively on dying or highly decaying wood, mainly of coniferous trees.

The most common false twin of edible royal honey is the inedible fiery scale.

Description and photo

Let's talk about how royal mushrooms or golden flakes look like (this is how mushroom fruits are officially called, according to the textbook), as well as where they live.

The height of a ripe mushroom can reach 18-20 centimeters, while the cap is not inferior to the leg in size and can also grow to a diameter of 19-20 centimeters. Mushroom pickers prefer to pick medium-sized mushrooms, not exceeding 10-12 centimeters - due to their visual appeal and denser texture.

The main distinguishing feature of the mushroom we are considering is that the mushroom grows not in a large colony, but in small "families". Sometimes on its own, identical to the royal or boletus. The color of the fruit is yellow, with a rusty tinge. The older the specimen, the darker its skin. The surface is rough, covered with frequent, small scales. A soft fibrous ring must be present on the leg, which disappears as the body ages.

Frequent, light-colored plates are located under the cap.

The ripening period of the crop is a warm season, approximately from late May to early September, may vary depending on the region and climate.

Popular questions about champignons

Can champignons be eaten raw?

subject to all growing conditions, the fruit bodies of the mushrooms are not processed by anything, the collector collects them with gloves in one touch, trying to practically not touch the cap. Therefore, in the production itself, pickers and technologists eat mushrooms right from the "garden", not even washing them. Home-grown mushrooms can also be eaten right from the garden.

What are royal mushrooms and portobello? How do they differ from ordinary champignons?

Royal champignon differs from the usual color of the cap (it is brown) and more pronounced mushroom taste and aroma. Portobello is the largest mushroom with a cap diameter of 10-15 cm, so they are ideal for stuffing. Interestingly, the name “portobello” doesn’t really mean anything, it’s just a good publicity stunt to draw attention to these mushrooms.

Which mushrooms are tastier?

The champignon is gaining taste and aroma gradually, an open mushroom is a mature mushroom, in which taste is most pronounced. Champignons with a diameter of 4–5 cm are best suited for frying and boiling soup.

Can compost after mushrooms be used on a regular farm?

Can! For champignon production, compost of the third stage is specially prepared, which is disinfected and saturated with nutrients. It is absolutely safe for plants, it can be used for mulching plantings and as a soil component for planting vegetable and flower crops.

Habitat

As for habitats, most often royal mushrooms are found on the surface of fallen, but still living trees or stumps. Spores can also get on the roots of growing trees and multiply there. The culture is considered a parasite and develops only on deciduous plants, if you find similar fruits on coniferous wood - it is better to pass by and refrain from harvesting.

Flakes are also harvested abroad, and in China and Japan, the royal honey fungus is grown purposefully, on an industrial scale.

The best spring diet for girls from mushrooms

The good news for the ladies is that there are only 20-25 kcal and 0 g of fat in one serving of champignons (4-5 medium-sized mushrooms). in addition, champignons contain nutrients, vitamins and trace elements (copper, B vitamins), antioxidants (selenium and ergothioneine) and amino acids. At the same time, white champignons contain albeit a small amount of vitamin D, but we need it very much, especially in spring.

How to distinguish a royal mushroom from a false one

As we said earlier, many lovers of forest gifts bypass the delicious royal mushrooms. The fact is that the fruits of culture can easily be confused with a false family - an inedible fireball. In fact, it is enough to pay attention to the substrate in which the mushroom rhizome develops - the moth prefers ashes, both fairly fresh and overgrown with weeds or shrubs.

You should also pay attention to the following nuances:

  • Mushroom color;
  • Smell;
  • Peel.

What do the false ones look like?

The color of the inedible moth is much brighter than that of its edible "relative"; nature has made sure that the fruit attracts attention with its appearance.

As for the aroma that the false mushroom exudes, it can hardly be called mushroom or pleasant. To all this, the surface of the cap of a dangerous plant is covered not only with scales, but also with a thin layer of mucus, if dampness prevails on the street.

A few more doubles of the royal delicacy are cinder and slimy flakes.

In the photo there is a false honey fungus Sulfur-yellow.

The first is distinguished by a too bright, orange cap, the absence of a ring around the leg and the presence of scraps of skin along the edges of the cap. The second is a bell-shaped, slightly concave head shape and sticky flesh.

Well, one more dubious representative of the flake family is the "ordinary" species.You can eat it, but only if you follow certain rules, with extreme caution.

The mushroom contains opium, which causes hallucinations, and becomes completely harmless only after prolonged heat treatment. It is also categorically contraindicated to combine such fruits with alcohol - there is a high risk that the body will receive a powerful poisoning, the consequences of which cannot be predicted.

Whatever gifts of nature a person collects, it is always important to remember one thing - if the mushroom seems unfamiliar to you and is in doubt, pass by. As a last resort, always insure yourself by having a photo of the fruit you are going to collect, compare the found crop with the image.

Growing methods

This variety is also grown at home, but this is a laborious process that requires a cool room with high air humidity. Compost made from wheat or rye and horse manure is used as a substrate. For growing, you need to take the following:

  • straw - 100 kg;
  • urea - 2 kg;
  • superphosphate - 2 kg;
  • gypsum - 7 kg;
  • chalk - 5 kg.

This is enough to prepare 300 kg of substrate. The straw is soaked in water for a day. Then they are taken out and laid in layers, alternating with manure (2-3 layers of both ingredients). Superphosphate is also mixed into the substrate.

A handful of mycelium is placed to a depth of 5-7 cm. The holes should be staggered, the distance between them is 25 cm. They are sprinkled on top with a thin layer of substrate about 5 cm. The first harvest will appear in 4 months.

Heat treatment

At the end of our article, we present to your attention the simplest and most common way of preparing royal honey agarics:

  • Carefully sort out the harvested crop, clean the legs from the ground, roots with debris, rinse the fruits.
  • Fill the forest gifts with cold, clean water. Bring to a boil, salt, boil for at least 10 minutes.
  • Gently drain the water, fill the container with new liquid and repeat the procedure, increasing the cooking time to 30 minutes. As soon as the product settles under the water, you can turn it off.
  • Throw the mushrooms into a colander, wait for the excess liquid to drain. Some hobbyists prefer to flush out mucus from their prey.
  • Prepare a clean jar or other container. Cut the onions into rings, place them on the bottom, sprinkle with spices. The next layer is boiled mushrooms sprinkled with coarse salt.
  • Place the resulting dish under oppression, place in a cool place, leave for 5-8 days.

After the specified period, the product will be ready for use. A similar blank is also suitable for rolling up for the winter. To do this, it is necessary to sterilize the jars, and then lay the mushrooms in layers by tightening the lids.

It is recommended to store the product in a refrigerator or a room where the air temperature does not exceed 10 degrees Celsius.

There are about 140 varieties of the golden scaly mushroom. Royal mushrooms are an edible product that is used in medicine and cooking. The extract obtained from them has an immunomodulatory effect. But there are false, health-threatening species similar to it.

Distinctive features

Champignon royal differs from ordinary champignon by the following features:

  • the size of the fruiting body: the royal is larger;
  • mushroom cap color: brown;
  • richer smell and taste: when ripe, the cap fully opens and the moisture in the pulp decreases. As a result, there is a concentrated, which means a rich smell and taste;

Similarities of royal fly agaric with other species

Unfortunately, very often the royal fly agaric is confused with other types of mushrooms. As a result, some people are at risk of poisoning.

Most often confused with red and panther fly agaric. Outwardly, these mushrooms are incredibly similar to each other.

But if you know what is the main difference between several types of these mushrooms, then you can easily notice the discrepancy.

For example, a royal fly agaric will never have a red hat. It can be any shade of brown, but not red.

Also, growths and warts on the royal fly agaric are white or beige. And here panther fly agaric has dark brown blotches.

Very often, the royal fly agaric can grow pale-colored. However, his hat has an inexpressive yellow-brown tint. In this case, mushroom pickers very often confuse the royal fly agaric with pale pink fly agaric or gray.

However, if you cut open the flesh of this mushroom, you will see a boiling white hue. This means that in front of you is a representative of the royal species. But at gray-pink fly agaric the pulp has a reddish tint.

As for the similarities with the panther fly agaric, they also differ. Largely due to the white rather than yellow flesh. The panther fly agaric on the cut has a bright yellow unnatural tint. But the royal brother has a pronounced white tint.

Also, the panther fly agaric never has a skirt, in comparison with the royal one.
